Weeknight Ground Beef
Lettuce Wraps

Chef Kat serving Weeknight Ground Beef Lettuce Wraps

When you asked for more weeknight favorites that don’t take forever – here is one that I love and everyone at your table will too. Ground beef with garlic and ginger with all the red pepper flakes you can handle, plus carrots, red bell peppers and scallions. It’s fresh and keeps your gluten free belly happy. Tender bib lettuce and crunchy cucumber salad bring it all together – don’t forget the hot sauce!

Simple and a short ingredients lists wins in this recipe. No need to complicate things. Use a few store bought items and fresh ingredients – it’s that easy. Plus no added sugar, soy or gluten. Feel good about what you eat.

Ground beef is honestly so quick and easy to make. It’s also a great cost effective meat to cook with. I use grass fed organic 85% ground beef. It gives you just the right amount of fat without being overly greasy and grass fed, just tastes better (in my opinion).

Add in Veggies that you love.

In this recipe I used carrots strips and red bell pepper. The colors are vibrant and it gives the ground beef mixture more texture and flavors.

Quickly toss in the carrot strips with the warm ground beef- it will cook the carrots slightly while leaving it a bit crunchy. Top with diced red bell pepper for more crunch and color.

Other ideas for veggies.

  • any color bell pepper
  • thinly sliced napa cabbage
  • instead of carrots strips or peeled – buy the pre shredded bag of carrots.
  • mushrooms
  • spinach or kale
  • bok choy

Let's talk Cucumber Salad

I like a crunch element in my meals and this simple + fast cucumber salad delivers just that.

Simply slice up a medium to large cucumber; leaving the skin on gives you more nutriants and it skips the peeling step. Mix in some sesame oil, seasoned vinegar, salt, pepper, sesame seeds, scallions and red pepper flakes. It’s that easy. Just toss to combine and serve with the hot ground beef mixture with tender bib lettuce.
