It’s a homerun for a crazy weeknight dinner. Tender salmon with an crunchy crust and fresh greens. It can’t get easier than this recipe.

The spice blend is perfect – double the recipe for next time. 

My kids love adding a teaspoon of honey to the tops – it’s makes a great sauce and the combination of smoky, spicy and sweet with the salmon is crazy good. I guess, I should ask my kids for more ideas in the kitchen.

Finding the perfect spice blend

It’s like a party in your mouth. 

Honestly, the balance of smoky, spicy and earthy come through with all of these.

I love the smoked paprika – I used in my Smoky Sweet Potato Mac + Cheese with Kale and my kids love it too. We add extra in our Favorite Crispy Cheesy Chicken Tacos.

A pinch (or more) of cayenne pepper with the onion and garlic powder is the best! 

Blackened seasoning can be made and kept in a contianer with a lid for 6 months – use it on chicken, pork, beef and seafood. It’s delicious.

*PRO TIP I recommend that you have all of these dried spices and herbs in your spice cabinet all the time. They are great staples and basics to use in so many recipes.

Description

Simple + yet powerful spice blend with delicious salmon + greens


Ingredients

Scale
  • 24 salmon fillets
  • 1 tablespoon coconut oil (or cooking oil of your choice)
  • 2 large handfulls watercress, arugula or mixed greens
  • 1 tablespoons olive oil
  • 1/2 lemon, juiced
  • sea salt, to garnish

 

Blackened Seasoning

  • 2 teaspoons smoked paprika
  • 1/4 teaspoon cayenne powder (or more)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon sea salt

Mix together in a small bowl.


Instructions

  1. Preheat your oven to 425F.
  2. Heat an enamel saucepan (oven safe) over medium heat.
  3. Sprinkle the salmon fillets with the spice blend to cover the top and sides generously.
  4. When the pan is heated, swirl in the oil to coat the pan. Add the salmon to the pan, meat side down (skin side up). Cook for 3 minutes or until browned (but not burnt). Turn over and cook for 3 more minutes.
  5. Add the saucepan to the oven to finish cooking the salmon for 6 minutes or until the salmon is cooked to your likely. Remove from the oven and let sit while you make the greens.
  6. Toss the greens with the olive oil and lemon juice.
  7. Arrange the greens on a plate with a salmon fillet. Sprinkle with sea salt.

Notes

Highly recommend to double the blackened seasoning recipe to keep for another time. It can be used on chicken, other fish (shrimp would be amazing), pork and beef. It’s really so verstile.

My kids love this salmon with a teaspoon of honey on top. Drizzle the honey ontop of the salmon when you pull it out of the oven and it’s amazing.
