Anything on a skewer looks amazing – trust me. Simply cut chicken thighs into smaller pieces, skewer them all up, season with salt and pepper and slather with your homemade Tomato + Date BBQ sauce. Grill to perfection and you have some deliciousness.
And if you don’t have an outside grill, don’t worry. I actually grilled these skewers on this Cuisinart Cast Iron grill pan on my kitchen stove.

Remember that time I made Horseradish and Mustard White BBQ Sauce – So delicious. It’s a twist from your typical tomato based sauce, but equally delicious. This is very different from this recipe for Chicken Skewers with Tomato + Date BBQ Sauce, but changing it up is always fun.
Oven Baked Chipotle BBQ Pork Ribs are my family’s favorite – I mean, ribs cooked in your oven! Plus my Sesame Garlic BBQ Chicken Skewers with Broccoli are so easy for a midweek meal and great as leftovers.
Love skewers, just like me.

Ingredients
- 1 lb. boneless skinless chicken thighs, cut into 2 inch pieces
- salt and pepper, to season
- 1 tablespoon olive oil (if using a grill pan on your stove top)
- skewers
- scallions, sliced thinly for garnish
Tomato + Date BBQ Sauce
- 1/2 cup pitted and chopped dates
- 1/2 cup ketchup
- 1 teaspoon tomato paste
- 2 teaspoons apple cider vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/4 teaspoon cumin
- 1 teaspoon honey, if desired for more sweetness
- 1/2 teaspoon each salt and ground black pepper
Instructions
- Heat your grill or grill pan up over medium/high heat. Meanwhile, skewer the chicken pieces and sprinkle both sides with salt and pepper.
- Blend all the BBQ sauce ingredients together in a high powdered blender. Add hot water if it is too thick – this will also help break the dates up a bit.
- Spoon 2 tablespoons of the sauce over the chicken skewers.
- Grill each side of the chicken for 4 minutes or until there are nice grill marks and the chicken is cooked through.
- Remove the chicken from the grill and set on a serving plate. Spoon enough of the bbq sauce onto the hot chicken to nicely cover it. Garnish with scallions if desired.
