Chicken Skewers with Tomato + Date BBQ Sauce

Ingredients

  • 1 lb. boneless skinless chicken thighs, cut into 2 inch pieces
  • salt and pepper, to season
  • 1 tablespoon olive oil (if using a grill pan on your stove top)
  • skewers
  • scallions, sliced thinly for garnish

Tomato + Date BBQ Sauce

  • 1/2 cup pitted and chopped dates
  • 1/2 cup ketchup
  • 1 teaspoon tomato paste
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cumin
  • 1 teaspoon honey, if desired for more sweetness
  • 1/2 teaspoon each salt and ground black pepper

Instructions

  1. Heat your grill or grill pan up over medium/high heat. Meanwhile, skewer the chicken pieces and sprinkle both sides with salt and pepper.
  2. Blend all the BBQ sauce ingredients together in a high powdered blender. Add hot water if it is too thick – this will also help break the dates up a bit.
  3. Spoon 2 tablespoons of the sauce over the chicken skewers.
  4. Grill each side of the chicken for 4 minutes or until there are nice grill marks and the chicken is cooked through.
  5. Remove the chicken from the grill and set on a serving plate. Spoon enough of the bbq sauce onto the hot chicken to nicely cover it. Garnish with scallions if desired.
