You read that right and I typed that right. 

Tender and saucy beef and peppers, mixed with enchilada sauce, black beans and cheese. Whoa! Add in some staple spices, fresh herbs and crispy tater tots – you won’t miss the tortillas, promise!

This Beef Enchilada Tater Tot Bake cooks in less than 10 minutes on the stove top and then the oven bubbles everything together in less than 15.

First of all – LESS dishes, should be the 2nd reason to make this recipe. Cook everything in an oven safe skillet. 

I love my Lodge enamel cast iron pan. It’s heavy, nice looking in that sleek grey and cleans up so easily – just ask my husband.

Or team, throw them on top and spread out quickly?

I will let you know that organizing and spacing them apart helps them to cook evenly and not become soggy. The cheese between the meat and the tater tots helps keep them from falling apart too.

Ingredients

Scale
  • 1 lb. grass fed ground beef
  • 1/2 yellow onion, small diced
  • 1/2 red bell pepper, small diced
  • 1/2 orange or yellow bell pepper, small diced
  • 23 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 15 oz. can red enchilada sauce
  • 1 15 oz. can black beans, drained
  • 3 cups shredded cheese (Monterey jack or aged cheddar)
  • 1 16 oz. package tater tots
  • small bunch cilantro, roughly chopped
  • 23 scallions, sliced

Instructions

  1. Preheat your oven to 450F.
  2. In a large (oven safe) skillet, cook the ground beef, onion and peppers together over medium/high heat. When the meat is almost cooked (no pink), mix in the garlic and cook for 30 seconds.
  3. Turn the heat off and mix in the smoked paprika, garlic powder, onion powder, cumin, enchilada sauce and black beans. Top with half of the cheese and 1/2 of the cilantro and scallions.
  4. Place the tater tots on top in a single layer. Top with the remaining cheese.
  5. Bake for 15 minutes. Remove from the oven and garnish with the remaining cilantro and scallions.
