Week night braising – you’ve got this! It’s really simple.

Mix together chicken bone broth, gochujang paste, garlic, ginger, honey and coconut aminos. Lather your chicken up and let the oven slowly cook your tender chicken to perfection. 

I like to add fresh broccoli towards the end – it soaks up some of the sauce while staying crunchy and bright green. Adding extra scallions to the end is a must!

I love my cast iron skillet

I have both seasoned cast iron pans and the enameled cast iron pans. I love them both – but for different reasons. 

For this dish I used my Lodge Enamel Cast Iron Skillet. It’s a 3.g quart Casserole pan with a lid. It’s heavy and with the helpful loop handles on either side, it’s easy to pull out of the oven and serve. Cleaning it is a breeze and the heat is consistent and even throughout. 

I have this one in gray but I’m eyeing the desert sage color.

Braised Gochujang + Garlic Chicken with Broccoli

Ingredients

  • 1 whole chicken, patted dry + back bone removed
  • salt and pepper
  • 1 cup chicken bone broth
  • 1 heaping tablespoon gochujang paste
  • 2 medium shallots, sliced thinly
  • 6 garlic cloves, smashed and left whole
  • 2 heaping teaspoons fresh ginger, minced
  • 2 tablespoons coconut aminos
  • 1/4 cup honey
  • 45 scallions, sliced
  • 1 large head broccoli, cut into bite sized pieces

Instructions

  1. Preheat your oven to 400F.
  2. Arrange the chicken in a cast iron skillet or heavy duty pan with sides skin side up. Press the chicken down so that the drumsticks and thighs are flat against the pan (butterflied or spatchcock).
  3. Sprinkle liberally with salt and pepper.
  4. Mix together the bone broth, gochujang pasta, shallots, garlic, ginger, coconut aminos, honey and the white parts of the scallions together in a bowl.
  5. Pour half of the sauce over the chicken. Braise in the oven for 35 minutes.
  6. Remove the chicken and pour the remaining sauce over the chicken and cook for 25 more minutes.
  7. Remove the chicken from the skillet by placing it on a plate or cutting board.
  8. Add the fresh broccoli to the pan and toss to coat with the sauce. Place it back into the oven for 8 minutes.
  9. Remove and put the chicken back into the pan for another 5 minutes to heat up. Cut the chicken into pieces and serve. Garnish with remaining scallions.
