Not the Tik Tok Green Goddess Salad on concrete countertop

Calling all Green Goddess Fans and Non fans…because I’ll convert you.

The dressing alone is fantastic. Creamy, filled with herbs, garlic and coconut cream – It’s ranch dressings sister – and might be better.

What takes this salad over top is the goat cheese, parsley leaves and crisp Spring peas.  You have to try this one!

Are you on Tik Tok?

I am not. I really know nothing about it. But when I was doing some research on this Not the Tik Tok Green Goddess Salad, I saw many links to a Green Goddess Salad – so apparently it’s cool to post it on Tik Tok. 

But not this one. I changed things up or did my own thing. 

No chopped or shredded lettuce. Added chicken and goat cheese – cause I can. I added more parsley along with the romaine lettuce. Used cucumbers and avocado – for crunch and creamy textures. Went dairy free with the dressing – thick and creamy with coconut cream, lots of parsley, dill and garlic.

Bring it on. But not on Tik Tok, cause I won’t see it.

Another recipe for Rotisserie Chicken.

No need to bake a chicken breast or two, just use some leftover rotisserie chicken. Grab one at your grocery store – thank me later. It will make your car smell amazing, plus you can use it all week in salad, sandwiches or quick dinners. Use it in my Roasted Chicken and Leek Soup and in another salad like, Berry Chicken + Cornbread Panzanella Salad.

Short cuts help so much, even when you are making a salad. It gives you protein and soaks up all the dressing, you will be craving.

Green Goddess Salad Dressing Ingredients

  • 1/2 cup unsweetened coconut cream
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • 1 garlic clove
  • 1/2 cup fresh parsley leaves
  • 1/2 teaspoon each salt and ground black pepper
  • 1 teaspoon dried dill
  • 1/2 teaspoon dried basil (optional)
  • 1/2 teaspoon onion powder (optional)
  • 1 tablespoons hot water

Salad Ingredients

  • 23 heads romaine gems (baby romaine leaves)
  • 56 long steams fresh parsley
  • 1 medium cucumber, diced
  • 1 avocado, sliced or diced
  • 1 cup rotisserie chicken, shredded
  • 1/41/3 cup fresh Spring peas
  • 1/4 cup (or more) crumbled goat cheese

Instructions

  1. Mix all salad dressing ingredients together in a blender or use a hand blender. Place it in a small jar with a lid. Place the jar in your refrigerator for at least 30 minutes – this allows it to thicken slightly.
  2. When ready to assemble the salad, place the romaine gems and parsley in a shallow bowl or plate for serving. Tuck in the cucumber, avocado, rotisserie cheese and Spring peas. Drizzle a few spoonful’s of the dressing on top and garnish with the crumbled goat cheese. Serve and enjoy.

Notes

If using a can of unsweetened coconut milk, place it in your refrigerator for at least 1 hour so that the cream and the coconut liquid separates. When you open the can, use only the concentrated coconut cream/milk.

Don’t have or want to use coconut cream or milk? Substitute with mayo. It will taste slightly different.

The longer you keep your dressing in your refrigerator, the thicker it will become.
