Buttery baby bib lettuce all covered with crunchy red peppers and cucumber slices, sweet mandarin oranges and delicious quick pickled red onions.

Simple grilled chicken adds much need protein and the dressing brings it all together. 

I love adding fresh herbs to salads. Cilantro adds the right about of spice and freshness. Don’t like it – add in a sliced scallion for a similar fresh flavor.

Sesame Orange Chicken and Baby Bibb Lettuce Salad

Description

Light and fresh salad with protein and surprising flavors.


Ingredients

Scale
  • 1 small red onion, sliced thinly
  • 1/4 cup apple cider vinegar
  • 1 heaping tablespoon white sugar
  • 2 skinless boneless chicken breasts
  • salt and pepper
  • 1 head baby bib lettuce
  • 1 10.7 oz. can of mandarin oranges, drained
  • 1/2 red bell pepper, sliced
  • 1 small cucumber, sliced thinly
  • 1 small bunch cilantro, roughly chopped

Orange Sesame Dressing

  • 1/3 cup coconut aminos
  • 1 tablespoon sesame oil
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed orange juice
  • 1 inch piece fresh ginger, minced
  • 1 garlic clove, minced
  • 1 pinch black pepper
  • 1 large pinch sesame seeds
  • 1 large pinch red pepper flakes
  • 1 teaspoon high quality honey (optional)

Combine all the ingredients together in a jar with a lid. When the lid is on tight, shake it well until it is fully combine. Set aside until needed.


Instructions

  1. To make the quick pickled red onions, place the onions, apple cider vinegar and sugar in a bowl. Make sure to press the onions down so that they touch the vinegar. Let sit covered on the countertop or refrigerator for at least 30 minutes (longer if you have the time).
  2. Heat a grill or grill pan on high heat. Sprinkle the chicken breasts liberally with salt and pepper on both sides. Place the chicken on the grill when it is very hot. Let cook for 6 minutes.
  3. Flip over and cook for 4 minutes or until the chicken is cooked through. Remove from the grill to a cutting board and let cool.
  4. To assemble the salad, place the baby bib lettuce on a serving platter or salad bowl. Layer in the mandarin oranges, red pepper, cucumber and cilantro.
  5. Slice the chicken and place on top of the salad. Serve with the dressing on the side.
