Greek Inspired Ground Beef Bowls with gluten free pita pockets

Give it to me in a bowl, pita pocket or piled high on a fork. Doesn’t matter how you eat this – just do it.

Tender ground beef with feta cheese with all the oregano and mint, and a herb oil drizzle and crunchy cucumber and tomato salad…with more mint. It’s simple, healthy, light and good.

Add in some creamy hummus, gluten free pita pockets, pine nuts and extra mint on top. It’s a simple meal for any day of the week.

You've seen this before.

You’ve seen me make this type of cucumber and tomato salad before. Honestly, I can’t stop making some version of it. In my Lemon Pork Mini Meatball Pita Pockets and in the recipe for Greek Steak and Cucumber Salad Bowls a simple cucumber salad makes a huge impact.

It’s fresh, crunchy and goes so well with warm meatballs, ground beef or pork, and chicken. 

I even add cucumbers on top of my favorite salmon recipe – Firecracker Salmon Bowls.

Step by Step.

Yes, there is a lot to assemble for this meal BUT make it easier for yourself. 

  • Use store bought hummus
  • Buy a Greek or Herb Dressing

The best parts of this recipe – besides the flavors, layers and all the textures + colors is, ground beef cooks up in no time. From the time I heated up my pan to when I was serving it – less than 10 minutes. 

  • Heat up your pita pockets or naan, while the ground beef is cooking.
  • And make the cucumber salad while the ground beef is cooking too!

Multitasking and having all your ingredients out – helps so much with time.

Greek Inspired Ground Beef + Feta Bowls

Ingredients

Scale
  • 1 1/2 lbs. ground beef
  • 1/2 teaspoon each salt and pepper, plus more for seasoning
  • 1 tablespoon dried oregano, divided in half
  • 1/2 teaspoon dried mint (optional)
  • 4 garlic cloves, smashed and roughly chopped
  • 3/4 cup crumbled or cubed feta cheese
  • 1 1/2 cups hummus
  • gluten free pita pockets or naan
  • 1/3 cup pine nuts
  • fresh mint leaves for garnish

Herb Oil (or use store bought Greek vinaigrette)

  • 1/3 cup olive oil
  • 3 tablespoons white vinegar
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon dried oregano, mint, marjoram (combination of all or whatever you have)
  • 1 pinch red pepper flakes (optional)

Combine all ingredients in a small bowl. Stir to combine.

Cucumber + Tomato Salad with Mint

  • 1 medium to large cucumber, sliced in half then sliced thinly
  • 1 cup cherry tomatoes, sliced in half
  • 1/3 cup olive oil
  • 2 tablespoons white vinegar
  • pinch of each salt and pepper
  • 1/2 teaspoon dried oregano
  • small bunch fresh mint leaves, roughly chopped

Combine all ingredients in a medium sized bowl. Toss to combine.


Instructions

  1. Heat a skillet over high heat. Sprinkle the ground beef with salt, pepper, oregano and mint.
  2. When the skillet is hot, add the ground beef. Using a wooden spoon, chop up the beef into 1 – 2 inch pieces. Let the beef cook for at least 4 minutes, before toss and stirring around. You want to caramelize and brown the beef. Toss the beef around gently and add in the garlic (trying not to break up into tiny pieces) until it is fully cooked.
  3. Turn the heat off and add in the feta cheese.
  4. Heat the pita pockets or naan up slightly and arrange the beef and cucumber salad in a pita pocket or in a bowl (like in the photos). Spoon some of the herb oil on top of the beef and garnish with pine nuts and fresh mint. Add a side of hummus and enjoy.
