These take less than 3 minutes to make, let them chill, cut and serve. Easy, right? And a nice sweet treat.

When I meal prep, I always have the entire family I mind. What do kids like? What do the grownups in the house enjoy? Adults enjoy just about everything kids do, let’s be honest. 

When it comes to snacks or quick bites, we love grabbing a slice of the Banana Cinnamon Coffee Cake because we could all use more bananas in our lives. And when I need to change up lunches, my homemade Pistachio Crusted Chicken Tenders, win every time.

And of course, the Tahini Cacao Chip Cookies are a perfect treat on the way to soccer practice. Because you know a soccer Mom (ME), needs a pick me up.

Gluten Free Cheerio Chocolate Bars

Ingredients

Scale
  • 3 cups gluten free plain flavored Cheerios
  • 1/3 cups coconut oil
  • 1/4 cup maple syrup
  • 1 cup chocolate chips
  • 1/2 cup high quality peanut butter
  • 1 large pinch salt

Instructions

  1. Add parchment paper to a 9×9 baking pan.
  2. In a medium saucepot, add the coconut oil, maple syrup, chocolate chips, peanut butter and salt. Heat over low heat and stir occasionally until everything melts and combines together completely.
  3. Mix the melted chocolate mixture with the cheerios in a large mixing bowl. Fold and mix with a wooden spoon or rubber spatula to fully coat the cheerios.
  4. Pour the mixture into the parchment lines baking dish. Press down so that it is a somewhat even layer. Place in your refrigerator for 30 minutes or until set. Remove and slice into squares.
