3 Tips to Make Recipes Work for You
(Not Against You)

When a Recipe Says 30 Minutes… Does It Really?

Let’s be honest. Have you ever started a recipe that promised to be ready in 30 minutes…Only to look up an hour later wondering what happened? I’ve been there.

As a personal chef, I can tell you that most recipes aren’t lying about the cooking time. The difference is that recipe developers assume you’re prepared before you start.

The secret isn’t cooking faster. It’s wasting less time. 

Here are 3 simple things I do that make every recipe feel easier, faster, and far less stressful.

1. Get Everything Out Before You Start

If you’ve ever wondered why a “30-minute recipe” somehow took you an hour, there’s a good chance this is the reason. One of the biggest time wasters in the kitchen isn’t the cooking itself—it’s constantly stopping to look for things.

 

Before I start any recipe, I pull everything out onto the counter. The olive oil, spices, vegetables, protein, broth, measuring cups, knives, cutting boards—everything. It may seem like an extra step, but it actually saves a tremendous amount of time. Instead of bouncing between the pantry, refrigerator, and spice cabinet every few minutes, you can focus on cooking.

 

Think of it as setting yourself up for success before you begin. Future-you will be grateful.

2. Read the Recipe First

I know, I know. Nobody wants homework before making dinner.

But taking two minutes to read through a recipe from start to finish can save you twenty minutes of frustration later.

Have you ever gotten halfway through a recipe only to realize you need a food processor that’s buried in the back of a cabinet? Or discover you should have started boiling water twenty minutes ago? That’s exactly what we’re trying to avoid.

A quick read-through helps you identify any special equipment you’ll need, gives you a mental roadmap of the recipe, and prevents those last-minute surprises that can make cooking feel stressful. If you need a grater, peeler, extra cutting board, or blender, get it out now. Your dinner will come together much more smoothly.

3. Preheat the Oven Immediately

This one is so simple, but it makes a huge difference.

 

The moment you decide you’re making a recipe that uses the oven, turn it on. Not after you’ve chopped the vegetables. Not after you’ve mixed the sauce. Right away.

 

One of the most common ways people accidentally add 10 to 15 minutes onto a recipe is by waiting until everything is assembled before preheating the oven. Then you’re left standing around waiting for it to heat up while dinner sits on the counter.

 

Let the oven do its job while you’re doing yours. By the time you’ve finished prepping the meal, the oven should be ready to go. **This is good advice for the grill too!

Can't stop at 3...4. Clean While Dinner Cooks

This might be my favorite tip because it has nothing to do with making dinner faster and everything to do with how you’ll feel afterward.

 

If your meal is in the oven, use those 20 or 30 minutes wisely. Put ingredients back in the refrigerator, toss a few dishes into the sink or dishwasher, wipe down your counters, and get your oven mitts or serving dishes ready.

 

Will your kitchen be spotless? Probably not. Mine certainly isn’t. In fact, there’s usually a respectable pile of dishes waiting for me when dinner is done.

But there’s something incredibly satisfying about pulling a meal out of the oven and seeing clean countertops instead of complete chaos. The mental and physical space feels lighter. Take a breath. Grab a drink. Pat yourself on the back.

 

Dinner is done, the kitchen is halfway reset, and you’re winning.

Look, dinner is showing up whether we’re ready or not. These are the little habits that help me stay one step ahead. Nothing fancy. Nothing complicated. Just a few simple tricks that make cooking feel easier and a lot more enjoyable.
