I honestly can’t believe we’re already at the beginning of August. Somehow summer flew by, and now back-to-school is starting to creep onto my calendar…and my mind.
The start of a new school year always brings a mix of excitement, nerves, packed schedules, and the inevitable question: “What’s for dinner?” During this season, one of the questions I get asked most is, “What do you actually make when life gets busy?” As a gluten-free personal chef and a busy mom, I don’t spend weeknights making elaborate meals. I lean on simple, protein-packed recipes that come together quickly and don’t leave my kitchen looking like a tornado blew through.
If you’re looking for easy school night dinners that make those busy evenings feel a little less overwhelming, these are eight recipes I come back to again and again.
