8 Budget-Friendly Dinners
Under $20 for Four

Groceries are expensive

Like…walk-out-of-the-store-with-two-bags-and-wonder-what-just-happened expensive.

We’re all trying to find that sweet spot between feeding our families healthy, satisfying meals and not blowing the grocery budget in one trip. And while we’re at it, can we also make dinner something that doesn’t take an hour to cook?

It’s a long list of requests.

Healthy. Affordable. Family-friendly. Quick. Gluten-free.

I’ve got you.

These are the recipes I come back to when I want to keep dinner under about $20 for four people without anyone feeling like they’re eating “budget food.” They’re packed with protein, full of flavor, and made with ingredients that work hard for your grocery budget.

Cilantro Lime Grilled Chicken + Rice in pink bowl

This is one of those meals that tastes like summer no matter what time of year you make it. Juicy grilled chicken, fluffy rice, and bright cilantro lime flavors keep it simple, fresh, and affordable.

Perfect for: Meal prep, busy weeknights, and backyard grilling.

One Pan Broccoli Cheddar Chicken + Rice in Lodge cast iron enamel pan

One pan, simple ingredients, and very few dishes to wash afterward. Creamy rice, tender chicken, broccoli, and cheddar cheese make this a comfort meal the whole family will happily eat.

Perfect for: Busy evenings and picky eaters.

Everything you love about a gyro, just served in a bowl instead of wrapped in pita. Ground beef, rice, fresh vegetables, feta, and a simple yogurt sauce make this dinner feel fresh without stretching your grocery budget.

Perfect for: Meal prep lunches and easy weeknight dinners.

chicken meatballs topped with enchilada sauce and scallions

These juicy chicken meatballs are simmered in enchilada sauce and topped with melty cheese for a dinner that’s packed with flavor. Serve them over rice or with roasted vegetables for an easy meal everyone will ask for again.

Perfect for: Taco night lovers and freezer meal prep.

This casserole has become one of my family’s favorite comfort meals. Seasoned ground beef, enchilada flavors, crispy tater tots, and melted cheese make it feel like a splurge without the expensive price tag.

Perfect for: Feeding a crowd and leftovers the next day.

Cozy Gluten-Free Vegetarian Shepherd’s Pie

You won’t miss the meat in this one. It’s hearty, cozy, packed with vegetables, and topped with creamy mashed potatoes that turn beautifully golden in the oven.

Perfect for: Meatless Mondays and cool evenings.

Lemon + Pomegranate Simple Pan Roast Salmon with carrots and spinach

Salmon can absolutely fit into a budget when you pair it with simple pantry ingredients and shop sales. Bright lemon, sweet pops of pomegranate, and perfectly roasted salmon make this feel like a restaurant dinner at home.

Perfect for: Date nights, healthy dinners, and when you want something a little special.

Peanut Chicken Egg Roll Stir Fry with Wooden Spoon

You won’t miss the meat in this one. It’s hearty, cozy, packed with vegetables, and topped with creamy mashed potatoes that turn beautifully golden in the oven.

Perfect for: Meatless Mondays and cool evenings.
