Ground Beef Lettuce Wraps
Your New Weeknight Favorite
When you asked for more easy weeknight dinner ideas that don’t take forever, these Ground Beef Lettuce Wraps were the first to come to mind. They’re fresh, fast, and always a crowd pleaser. Tender ground beef cooks quickly with garlic, ginger, and as many red pepper flakes as you can handle. Carrots, red bell pepper, and scallions bring crunch and color. And yes—this recipe is naturally gluten free, soy-free, and contains no added sugar.
Simple and Fresh Ingredients
A short ingredient list makes this recipe perfect for busy nights. Use a mix of store-bought shortcuts and fresh veggies. It’s that easy. Plus, it’s a healthy ground beef recipe you can feel good about eating.
Ground beef is also incredibly cost-effective. I use grass-fed organic 85% ground beef for the best flavor and just the right amount of fat. It cooks quickly and absorbs all those ginger-garlic notes beautifully. To keep this a low carb meal, pile everything into crisp bib lettuce leaves and finish it with a cool cucumber salad.

This recipe is flexible. Swap in veggies you love. In this batch, I used carrot strips and red bell pepper for a bit of crunch and vibrant color. The warm beef softens the carrots slightly while keeping them crisp. Red bell pepper adds another layer of texture.

Thinly sliced napa cabbage
Shredded carrots (store-bought works great!)

The Crunchy Cucumber Salad
Every great lettuce wrap needs a fresh, crunchy element. This simple cucumber salad is ready in minutes and pairs perfectly. Slice a medium or large cucumber. Keep the skin on—it adds nutrients and saves time. Then toss with sesame oil, seasoned vinegar, salt, pepper, sesame seeds, scallions, and red pepper flakes. Serve it alongside the hot ground beef mixture tucked into tender bib lettuce, and you’ve got a complete meal.

Chill your washed lettuce leaves before serving. Cold, crisp lettuce makes every wrap sturdier and more refreshing.

Description
Amen to easy and delicious weeknight meals. Ground beef makes it fast – yes, dinner in less than 15 minutes.
Ingredients
- 1 lb. ground beef (85% works great)
- 2 medium shallots, small diced
- 4 garlic cloves, minced
- 1 inch piece of ginger, minced or grated
- 2 tablespoons sesame oil
- 1/4 tablespoon soy sauce or tamari
- 1/3 cup coconut aminos
- 1 teaspoon or more hot sauce
- 2 medium carrots, peeled or shredded
- 1/2 red bell pepper, small diced
- 4 scallions, chopped
- 1 tablespoon sesame seeds
- bib or iceberg lettuce
Instructions
- Heat up a skillet over medium high heat. Add in the ground beef and begin to break up with a wooden spoon. Add in the shallots, garlic and ginger after cooking it for 3 minutes. Continue to break up and combine everything until the beef is completely cooked.
- Turn the heat off and mix in the sesame oil, soy sauce, coconut aminos, hot sauce and carrots. Stir to combine everything.
- When ready to serve, garnish with red bell pepper, scallion and sesame seeds.
- Serve in small cups of lettuce with additional hot sauce.
