Check out all those colors. We eat with our eyes after all. 

Tender and crunchy romaine lettuce, along with the red bell pepper, raw carrots and sugar snap peas. My favorite parts are the fresh basil and mint, orange and lime juice in the dressing and lots of fresh ginger and garlic hints. Basic, I think not.

I love arranging the vegetables in little piles all around the bowl. Of course you drizzle it all with the dressing and toss it together, but all the colors still show up.

Serve this at your next friends and family gathering.

This salad not only looks amazing but is great to feed a crowd. Make it a few hours before you are going to serve it and just toss with the dressing when you serve it. SO easy, right?!

Fast, Easy + Simple Asian Green Salad

Ingredients

Scale
  • 1 large head of romaine lettuce, roughly chopped
  • 1 cup shredded carrots
  • 1 red bell pepper, sliced
  • 1 overflowing cup sugar snap peas, sliced in half
  • 4 mini cucumbers (or 1 medium- large), thinly sliced
  • 1 cup shredded cabbage blend
  • 10 or more fresh basil leaves, torn
  • 10 or mint leaves

My Simple Sesame Ginger Dressing

  • 1/4 cup olive oil
  • 2 teaspoons sesame oil
  • 2 tablespoons orange juice
  • 1/2 teaspoon sriracha
  • 1 lime, juiced
  • 2 tablespoons coconut aminos (or soy sauce)
  • 1 tablespoons fresh ginger, minced
  • 12 garlic cloves, minced
  • 1 tablespoons sesame seeds

Instructions

  1. Layer all the salad ingredients into a bowl or place the lettuce on the bottom and arrange the ingredients into small piles around the bowl (like in my photos).
  2. Mix all the dressing ingredients together in a jar with a lid and shake.
  3. Pour the dressing over right before serving and toss to coat everything.
