Roasted Honey Bacon Wrapped
Thyme Carrots

Bacon wrapped anything is usually going to be good, am I right?

I love a good whole roasted carrot and wrapping them in bacon, just takes it to a whole new level.

They are show stoppers – everyone will grab an extra one or two for their plates.

Grab yourself some thick cut bacon, peel your carrots and twirl the bacon around them. Sprinkle with black pepper and finish with some honey and red pepper flakes. It’s surprisingly good.

I love serving these Roasted Honey Bacon Wrapped Thyme Carrots at dinner party – they are fancy looking, taste amazing and don’t take very much time to put together.

Always thick cut.

When I purchase bacon, I always choose thick cut. I like my bacon to have depth, more texture and carry some weight.

I mean the more bacon, the better.

I always cook my bacon crispy (sometimes, too crispy – just ask my husband). I love a good crunch – the fat just tastes better that way, in my opinion.

What type of bacon do you like?

Did you know?

That I don’t like raw carrots.

I’ll only eat them raw when they are grated or cut into strings, like in my Ultimate Buffalo Chicken Salad with Spicy Cashews or Ginger Chicken Lettuce Cup Salad. They are great along side, Saucy Sesame Ginger Short Rib Ramen Bowls but you won’t catch me snaking on raw carrot sticks.

Description

Simply roasted carrots with a twirl of bacon and a brush of honey. Add black pepper and thyme for extra.

Ingredients

Scale
  • 1 bag carrots, peeled and trimmed
  • 1 lb. thick cut bacon
  • black pepper
  • 2 tablespoons honey
  • 1/2 teaspoon dried thyme
  • parsley and red pepper flakes to garnish, optional

Instructions

  1. Preheat your oven to 400F.
  2. On a sheet tray, wrap one carrot at a time with a slice of bacon. I cut some sliced of bacon in half for the smaller carrots and use a whole slice for the larger carrots. The bacon doesn’t have to cover the entire carrot (as you can see in the pictures).
  3. Repeat until all the carrots are wrapped in bacon. Place on the sheet tray in a line with a little room between each of them.
  4. Sprinkle with black pepper and place in the oven. Roast for 15 minutes.
  5. Remove from the oven and carefully turn the carrots and bacon over, using tongs. This will help the underside get nice and crispy.
  6. Place back in the oven for another 15 minutes or until the carrots are tender and the bacon is cooked.
  7. Remove from the oven and place on a serving platter or plates. Brush each carrot with a little bit of honey and sprinkle with thyme. Garnish with parsley and red pepper flakes, if desired. Serve.
