It’s basically the scents of apple picking, a cinnamon stick and a cookie in your mouth at the same time.

Pile on the apple pie seasoning, fresh honey crisp apple, gluten free oats and all that maple syrup.

Who cares about breakfast!?!?! This is a great snack.

Gluten Free Apple Pie Granola

Description

Just an apple pie in granola form! So delicious to snack on or for breakfast.


Ingredients

Scale
  • 2 cups gluten free old fashioned rolled oats
  • 1/4 packed brown sugar
  • 1/2 cup pecans
  • 1/2 cup almonds
  • 1/2 honey crispy apple, small diced
  • 1 large pinch of salt (around 1/4 teaspoon)
  • 3 teaspoons apple pie spice
  • 4 tablespoons real maple syrup (divided in half)
  • 1/4 cup melted coconut oil
  • 1/2 cup apple sauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon vanilla bean paste (optional but encouraged)

Instructions

  1. Preheat your oven to 350F.
  2. Mix together the oats, brown sugar, pecans, almonds, diced apple and salt together in a large bowl.
  3. In another bowl, combine 2 tablespoons maple syrup, melted coconut oil, apple sauce, vanilla extract and vanilla bean paste together. When combine, pour the wet mixture into the dry oats mixture.
  4. Mix together but folding over with a rubber spatula or wooden spoon until everything is combine and the oats are coated.
  5. Pour the granola mixture onto a baking sheet tray. Spread out to cover the entire pan and so the granola is in a thin layer.
  6. Bake for 15 minutes. Remove and toss and turn the granola over. Spread out again to cover the entire pan.
  7. Bake for 15 more minutes. Remove and toss and turn the granola over. Spread out again to cover the entire pan. Bake for 8 more minutes and remove from the oven. It should be toasted brown and drying out.
  8. Remove from the oven and pour the remaining 2 tablespoons maple syrup over the granola and let sit until cooled.
  9. Mix and store in a glass container.
