I'm loving | May

Chef Kat's Picture of Elk in Open Space in Evergreen, Colorado

I have felt like I’m Colorado in the month of May.

Colorado weather is crazy with 1 foot of snow one day and then the next it’s 70 degrees – that’s the month of May for you.

It tends to be an up and down month for me. I think it’s the swing of weather and pressure – it doesn’t help with my migraines, headaches or mental health. The uncertainty of which season it really is. The end of the school year – looking forward to Summer nights, a more relaxed schedule.

May has historically brought me huge changes in my life. Positive business moves, life moves (literally), a chapter closing and a new one opening up.

This month always brings me new motivation in the kitchen. So many new seasonally fresh ingredients, thinking about meals outside, lighter comfort foods and all the smoothies and fruit.

Figuring out the best motivation + inspiration.

I’m not cooking all the time. There are sides of my business, that get overlooking or unnoticed …even by me. Ha!

It’s hard stay on top of all the mileage logs, receipts, invoices, proposals, food costs, spice inventory and let’s be honest – how much time I’m brainstorming new ideas. And all the blog posts – time writing recipes, posting, social media and emails.

With all this being said, I need a space (desk area) where I can do all these things – that both gives me motivation and inspiration.

Here are some ideas, for desks that I’m loving. All from West Elm.

Would you buy a couch or bed online?

With titles like “The best internet couch” and other raving reviews…well, I just have to know. Is it? This Capri Sofa from Poly + Bark is in my cart.

I’m considering this Pullover Pleated bed from Cb2 for our guestroom. And my oldest daughter likes this simple yet mid century bed – Plus, It’s on sale, which I love.

We are moving!

What a journey it has been. I can’t believe it’s been 1 year. Check out the photos below – sneak peak of what we are getting ourselves into.

PLUS, if you follow me on Instagram you are going to start seeing renovation stories. And this kitchen – oh boy. I have a vision for it but for now, it will have to work.

Remember our last house? Well, we aren’t doing that big of a project this time – not tearing down this roof BUT we will renovate every room, paint ever wall, redo all the floors and maximize the storage. It’s going to be a 2-3 year project so get ready.

See my last post on moving from the east coast back to Colorado, here.

What I made 1 year ago.

School is out. Summer is here.

Time to open up the windows. Eat outside. Enjoy the simple things. What are you most excited about?
