I'm loving | February

I started the month off sick in bed, followed quickly by a whirlwind trip to California and then creating 18 new recipes.

The rollercoaster of events in February, has set the tone for my March. I just know it. Not to say February wasn’t good – it was. We went night skiing at our local mountain, skied a few times (during the day), started being a soccer Mom again, summer planning, dinners out with friends, more self care for myself and reconnecting with an old friend. 

But, I’ve got March goals on my mind. 

  • My creativity will shine
  • I’ll get my gut health back on track
  • Focus on my daughters gut health too!
  • Making a challenging committment for the Fall
  • Buying a professional blender – ha, had to add this one!

Speaking of blenders...here is what I like.

Blendtec Professional – Wowza, it’s expensive but hold me – it’s amazing!

Vitamix – everyone says these are the best, but are they?? 

Blendtec Classic – less expensive and a bit smaller.

I just want to make hummus and smoothies…and so many more sauces!

My new favorite snacks

Hu Get back to Human cashew butter dark chocolate bars are perfect for an after meal treat. 

Lesser Evil Paleo puffs are addicting. When I need a salty, cheesy bite – I grab these.

Bubba’s grain free snack mix is a pleasant surprise. 

Sana’s coconut flour himalayan pink salt chips are crazy good – give me some salsa or cashew dip and I’ll finish the bag.

All are grain free and made with love!

My favorite recipes in February.

Recipes Fails.

For every recipe, there has been a fail. They rarely turn out perfect.

I have forgotten salt in a baked recipe or added too much broth for a sauce. It all happens.

Sometimes when I try to hard to make it just right – it doesn’t turn out. I’m learning to really foster when my creative energy is running to really get into the kitchen then.

Here are some examples of my fails…some tasted great, but in pictures looked less desirable. Or the reverse. 

It’s a process and I’m constantly adding new ingredients or removing them.

What I made 1 year ago.

It’s already March and I CANNOT believe it.

Now is the time to saying yes. Thriving in the unexpected. Taking deep breaths. Hugging more. Manifest what you deserve. Plan a trip or an adventure – I love looking forward to things.
