Grilled Romaine Salad with Blue Cheese & Yellow Tomatoes

Description

The easiest side salad for your next meal on the grill.


Ingredients

Scale
  • 12 tablespoons olive oil
  • 1 head of romaine lettuce, washed, dried, cut in half with the root end in tact
  • salt and pepper
  • 1/4 cup (or more) crumbled blue cheese
  • 1 handful yellow cherry tomatoes

 


Instructions

  1. Heat your grill on high heat. Using a sheet pan, arrange each half of lettuce and drizzle the olive oil on top. Massage with your hands so that it coats most of the lettuce – remember to turn over so that both sides are coated. Sprinkle with salt and pepper (do both sides of lettuce).
  2. When your grill is hot, add lettuce and put the lid on for 1 minutes. Open the grill and flip the heads of lettuce over – close the lid again for 1-2 minutes or until the lettuce begins to wilt and char.
  3. Remove the lettuce to the sheet pan and right away sprinkle with the blue cheese and tomatoes.
