Why I Became a Gluten-Free
Personal Chef

White Sparrow Food Company didn’t start the way most people think. 

It wasn’t some perfectly planned business idea with a five-year strategy and a color-coded vision board. It started with food. And honestly… a tiny commercial kitchen with almost no windows. Ugh. I need natural light to thrive.

When White Sparrow first began, it was a small meal delivery business. Small quickly turned into not small — growing to over 100 clients in what felt like overnight.

Clients ordered meals through my website, I cooked everything in a commercial kitchen all day long, and meals were delivered to coolers on front porches or refrigerators in garages.

And while the business was growing… something felt off.

I realized I never actually met most of my clients. No conversations. No connection. No sitting around a kitchen island talking about food.

Just me, fluorescent lighting, and approximately zero natural light wondering if this was really what I wanted food to feel like.

Because to me, food has always been about more than eating. It’s comfort. It’s connection.
It’s bringing people together. And somehow… I was missing that part completely.

Then one phone call changed everything.

I still remember it clearly. A man called and asked if I could cook everything Paleo.

And without hesitation, I confidently said:
“Absolutely.”

Meanwhile internally? Complete Panic. Because I had absolutely no idea what Paleo even meant. Not a clue.

Then he started listing all the things he couldn’t eat… and the list just kept going. No dairy. No grains. No this. No that.

I remember my stomach sinking thinking: This is going to be a challenge. But something in me got excited too.

Because even though I didn’t know exactly how I was going to do it… I knew I wanted to figure it out. So I dove in head first.

He bought me my very first Paleo cookbook, and I became obsessed with learning. He gave me the confidence I was looking for and trusted me. I tested recipes constantly, studied ingredients, experimented in the kitchen, and slowly started understanding something much bigger than “special diets.”

I realized people weren’t just looking for food. They were looking for help. Relief. Answers. Hope that eating differently didn’t mean giving up delicious meals forever.

And that was the moment everything clicked.

That’s when I knew I had found my path.

Not just as a personal chef… but as a gluten-free personal chef. I wanted to work with people who felt overwhelmed and didn’t know where to start. People with dietary restrictions. Gut health struggles. Nutritional goals. Or what I now lovingly call… food superpowers. Because honestly? That perspective changes everything.

So one day, I typed “Gluten-Free Chef” next to my name.

And somehow… word spread fast. One client became another. Then another. Then my schedule was suddenly filled with gluten-free and dairy-free clients across Colorado.

And the funny thing is — I never planned for this to become my niche. But looking back now? It makes perfect sense.

“Wait… THIS is gluten-free?”

The part that still brings me the most joy — and honestly, the biggest adrenaline rush — is watching someone take that first bite of something they assumed they could never enjoy again. Their eyes widen. They pause mid-bite. They look slightly confused.

Like:
“Wait… THIS is gluten-free?”

That moment never gets old. Because gluten-free food has this reputation of feeling restrictive, complicated, or disappointing. And I love proving people wrong. I love creating meals that make people feel excited about food again. Meals that feel comforting. Familiar. Delicious. Giving clients peace of mind that they don’t have to stress, panic, or overthink every single meal anymore. That someone’s got them.

And maybe that’s really what White Sparrow Food Company became in the end. Not just a food business.

But a place where people can finally relax around food again.
