This Grilled Steak with Rustic Romesco Is SO Good

If steak night needs a little shaking up, this grilled steak with romesco sauce is one of my favorite ways to do it. Juicy grilled steak, crispy-edged sweet potato chips, and a smoky roasted red pepper sauce with almonds, garlic, parsley, and chili flakes. It looks impressive. It is absolutely not difficult.

This is the kind of dinner I love when I want something really good without turning it into a whole production. Grill the steak, let the oven handle the potatoes, and throw the romesco ingredients together while everything cooks.

The Romesco Sauce Is Ridiculously Easy

Traditional romesco can involve roasting peppers and tomatoes, but we’re not doing all that tonight.

Add everything in your blender or food processor – a jarred roasted red pepper, almonds, parsley, garlic, olive oil, and chili flakes. Chop everything together until you have a chunky, rustic sauce. I love the texture here.

It’s smoky, garlicky, a little spicy, and SO good spooned over grilled steak.

Sweet Potato Chips Make Steak + Potatoes More Fun

Instead of the usual roasted potatoes, thinly slice sweet potatoes, toss them with olive oil and salt, and roast until browned around the edges.

Some will get crispy. Some will stay a little softer in the middle. That’s exactly what I want.

And yes, you’re probably going to eat several straight from the sheet pan while you’re waiting for the steak to rest.

Hanger or Flat Iron Steak Works Beautifully

You don’t need an expensive cut of beef for this recipe. Hanger steak and flat iron are both packed with flavor and cook quickly on a hot grill or grill pan.

I know Hanger steaks can be hard to find – honestly, your favorite cut of steak will work perfectly. It’s really all in the sauce.

Season simply with salt and pepper because the romesco is bringing plenty to the party. Once the steak is cooked to your liking, let it rest before slicing it against the grain.

That resting part is annoyingly important. Give it a few minutes.

This Is My Kind of Steak Dinner

The combination is what makes this one: hot juicy steak, smoky romesco, salty sweet potatoes, and that little hit of heat from the chili flakes.

This grilled steak with romesco sauce feels like something I’d order out, but it’s simple enough to make at home after a long day. Add a big green salad and dinner is handled.

Chef's Note

Make the romesco while the sweet potatoes roast and the steak comes to room temperature. That’s how I keep a meal like this moving instead of making each component one at a time.

And make extra romesco. It’s ridiculously good the next day spooned over eggs, chicken, roasted vegetables, or whatever leftovers you find in the fridge.

This grilled steak with romesco sauce pairs juicy steak with smoky roasted pepper sauce and sweet potato chips for an easy gluten-free dinner.


Ingredients

Sweet Potato Chips

  • 2 medium sweet potatoes
  • 2-3 tablespoons olive oil
  • 1 teaspoon salt

Steak & Romesco Sauce

  • 1 1/2 lbs. steak (hanger or flat iron works great too, see note)
  • 1/2 teaspoon each salt and black pepper
  • 1 roasted red pepper (from a jar)
  • 2 tablespoons olive oil
  • 1/4 cup slivered almonds
  • 1/8 teaspoon salt
  • 1/4 cup fresh parsley
  • 1 garlic clove
  • 1/4 teaspoon chili flakes

Instructions

  1. Preheat your oven to 400 degrees.
  2. Cut the sweet potatoes into thin coins that are the same thickness (see note) – about 1/8 of an inch. Drizzle olive oil over them and toss with tongs or your hands to quickly coat them. Line them out on a baking tray (or 2) so that they aren’t touching each other. Sprinkle them with salt. Roast in your oven for 15 minutes or until they are crispy. Remove and sprinkle with kosher or flake salt.
  3. Meanwhile, heat your grill or skillet to high heat. Sprinkle the steak with salt and pepper on both sides. When your grill/skillet are hot, grill the steak for 6 minutes on the first side. Flip over and cook until it reaches the temperature or doneness you desire. Remove from the grill and let rest.
  4. To make the romesco sauce, add the red pepper, olive oil, almonds, salt, parsley, garlic and chili flake to a blend. Pulse until it reaches the consistancy you like. I left mine kind of chunky but smooth works too. You will have to scrap the sides or stir is around with a spoon between pulses since it’s so thick and yummy.
  5. Spoon the romesco sauce on top of the grill, slice and serve with sweet potato chips (and ketchup)

Notes

Finding Hanger Steaks can sometimes be difficult. I found this one at Whole Foods. Flat Iron or Tri Tip work great in this recipe too. Honestly, any cut of steak you like…it’s all in the sauce.

The cooking time of your steak is personally. It don’t give you exact times except for the first sear or the first side. You want the steak to ‘chill out’ on your grill/skillet for 6 minutes before you flip over – this helps form a nice toasty brown and starts to render the fat…flipping over constantly does not allow this to happen.

When making the sweet potato chips – using a mandoline is really the best tool. It cuts the potato evenly and fast – just watch your fingers.
