Description
This lemon garlic grilled chicken is juicy, flavorful, and topped with a fresh herb sauce packed with lemon, parsley, and garlic. Perfect for meal prep, summer parties, salads, sandwiches, and easy gluten-free dinners.
Ingredients
- 4-6 boneless chicken thighs, patted dry
- 4 garlic cloves, minced
- juice from 1/2 large lemon, divided in 1/2 (about 2 tablespoons)
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
Fresh Herb Sauce
- 1/4 cup fresh parsley, finely chopped
- 1 garlic clove, minced
- 1 tablespoon lemon juice
- zest from 1/2 lemon
- 1 tablespoon olive oil
- 1/4 teaspoon sea salt
- 1 pinch or 1/4 teaspoon red pepper flakes
Instructions
- Place the chicken on a plate or tray. Add the garlic, lemon juice, salt and black pepper to the chicken. Toss with tongs and let sit.
- To make the fresh herb sauce, combine all ingredients in a small bowl and mix. Let sit until needed.
- Turn your grill on high and let preheat. When your grill is hot, add the chicken in an even layer and spread out so each chicken thighs has about 2 inches space between the next. Cover the grill and let cook for 4 minutes.
- Flip the chicken over when the under side has browned grill marks. Turn the heat temperature down to medium and place the cover back on. Let cook for 4 more minutes or until the chicken is fully cooked. Remove the chicken to a platter or plate.
- Spoon the herb sauce over the warm chicken. Serve with additional herb sauce on the side and enjoy.
Notes
If you want to make it a little more fancy or you just love more lemon flavor, add the lemon to the grill. Use the 1/2 of lemon you sqeezed and place open side down on the grill at the same time you grill the chicken. More flavor will come out of it. Once the chicken is finished cooking, remove the lemon and squeeze over the chicken.
