Lemon Garlic Grilled Chicken
with Fresh Herb Sauce

great for leftovers | light for summer

If Summer had a signature chicken recipe, this might be it. Juicy grilled chicken thighs quickly marinated in lemon, garlic, salt, and pepper, then finished with a bright herb-packed sauce that I could drink. Well, maybe just soak up with some bread.

It’s fresh. It’s flavorful. It’s ridiculously easy.

And it’s the kind of meal that makes you wonder why you ever complicated dinner in the first place.

The chicken stays tender and juicy thanks to a simple lemon garlic marinade, while the fresh herb sauce adds layers of flavor that make every bite better than the last. Serve it with roasted vegetables, a crisp salad, rice, or even pasta and you’ve got yourself the perfect summer dinner.

Why You'll Love This Recipe

This is one of those recipes that feels special enough for company but easy enough for a weeknight.

  • Gluten free
  • High protein
  • Ready in under 30 minutes
  • Perfect for meal prep
  • Great for entertaining
  • Packed with fresh summer flavors

The Secret Is the Marinade (10 minutes)

You don’t need a long list of ingredients to make great grilled chicken. AND for this recipe, a quick 10 minute marinade works great (I do it while the grill is heating up).

  • lemon juice
  • garlic
  • salt
  • pepper

That’s it. The lemon helps tenderize the chicken while adding bright flavor, and the garlic does what garlic always does—makes everything better. The result is juicy chicken that never feels dry or boring.

It's all about the sauce.

Once the chicken comes off the grill, it gets topped with a fresh lemon herb sauce inspired by chimichurri.

Made with:

  • garlic
  • lemon zest
  • lemon juice
  • olive oil
  • parsley
  • red pepper flakes
  • salt
  • pepper

It’s bright, fresh, garlicky, and loaded with flavor. You’ll find yourself spooning extra over everything on your plate. Maybe even directly onto roasted vegetables and rice.

What to Serve with Lemon Garlic Grilled Chicken

This chicken works with almost everything.

Try it with:

  • roasted vegetables
  • grilled zucchini
  • summer salads
  • rice or quinoa
  • roasted potatoes
  • pasta tossed with olive oil and herbs

Simple sides let the chicken shine.

Perfect for Summer Meal Prep.

One of my favorite things about this recipe is how well it works throughout the week.

Make a batch and use it for:

  • lunch salads
  • grain bowls
  • wraps
  • sandwiches
  • quick dinners

My personal favorite? Sliced chicken piled onto toasted bread with fresh tomatoes and a little extra herb sauce. Summer lunch perfection.

Great for Feeding a Crowd – Need a recipe for your next backyard gathering? This is it.

The chicken can be marinated ahead of time, the sauce comes together in minutes, and everyone loves it.

Every time I serve this recipe to a group, someone asks for the recipe before the meal is over.

Instructions

  1. Place the chicken on a plate or tray. Add the garlic, lemon juice, salt and black pepper to the chicken. Toss with tongs and let sit.
  2. To make the fresh herb sauce, combine all ingredients in a small bowl and mix. Let sit until needed.
  3. Turn your grill on high and let preheat. When your grill is hot, add the chicken in an even layer and spread out so each chicken thighs has about 2 inches space between the next. Cover the grill and let cook for 4 minutes.
  4. Flip the chicken over when the under side has browned grill marks. Turn the heat temperature down to medium and place the cover back on. Let cook for 4 more minutes or until the chicken is fully cooked. Remove the chicken to a platter or plate.
  5. Spoon the herb sauce over the warm chicken. Serve with additional herb sauce on the side and enjoy.

Notes

If you want to make it a little more fancy or you just love more lemon flavor, add the lemon to the grill. Use the 1/2 of lemon you sqeezed and place open side down on the grill at the same time you grill the chicken. More flavor will come out of it. Once the chicken is finished cooking, remove the lemon and squeeze over the chicken.
