Crispy Smoky Cauliflower Tacos

These tacos are proof that cauliflower can absolutely be the star of dinner. Not hidden in a sauce. Not pretending to be something else. 

As you may know, one of my daughters is vegetarian and loves tacos. I decided to change things up a bit – since she always has roasted sweet potato, black bean and rice tacos…these cauliflower tacos use my All Purpose Mexican Spice Blend (which I put on so many things) – it quickly come together and now everyone is happy. 

Just perfectly roasted cauliflower coated in smoky spices, layered with melty cheese, and crisped up in a skillet until golden and crunchy. 

There is nothing fancy about these – using few quality ingredients (hello, fresh cauliflower and cheese) and a quick pan fry gives them the crispy texture we all want. Serve with your favorite salsa, guacamole or hot sauce…or make my jalapeno lime cream from this recipe

A Great Kid-Friendly Dinner

One of the reasons I love this recipe is because it’s approachable.

The smoky flavors are there. The crispy texture is there. The cheesy goodness is definitely there. But it’s not spicy.

Which means kids can enjoy it while adults add hot sauce if they want a little extra kick. Everybody wins.

The Secret Is the Cauliflower...or the spice blend?!?!

Cauliflower is one of those vegetables that transforms when roasted. The edges become golden. The texture softens while still keeping a little bite.

And when you toss it with my All-Purpose Mexican Inspired Spice Blend?

It’s really good.

Description

These crispy smoky cauliflower tacos are loaded with roasted cauliflower, melty cheese, and smoky taco spices. A gluten-free, vegetarian dinner that’s easy, family-friendly, and perfect for weeknights.


Ingredients

  • 1/2 head of cauliflower, chopped into 1/2 inch pieces
  • 2 tablespoons olive oil, divided in 1/2
  • 1-3 tablespoons of All Purpose Mexican Spice Blend
  • 1 cup grated or crumbled cheese
  • 8-10 corn tortillas

Instructions

  • Preheat your oven to 425F.
  • Place the chopped cauliflower on a baking sheet tray. Drizzle with 1 tablespoon olive oil and toss to coat. Sprinkle the spice blend and toss to coat. When your oven is hot, roast the cauliflower for 15 minutes or until the edges are slightly browned.
  • Remove the cauliflower from the oven to let cool slightly.
  • Heat up a skillet over medium heat and swirl in 1 tablespoon olive oil. Add 2 tortillas to the pan, giving them an inch or two between them. Spoon a small amount of the roasted cauliflower onto one side of each of the tortillas. Sprinkle with cheese. Use a spatula to fold the opposite side of the tortilla (the side that doesn’t have the cauliflower on it) onto the cauliflower – basically fold it in half to create a taco. Let cook until the underside is browned. Carefully flip over and cook for about 2 more minutes.
  • Remove and repeat. Enjoy right away.
