Paleo Thai Turkey Burgers

Winter weather doesn’t mean you are stuck with meat and potatoes, roasted veggies, slow cooked meals and mashed potatoes. Don’t worry I have lots of those recipes. Just sometimes you need to change things up and have a burger…that you can cook in your oven or air fryer.
You know you eat with your eyes. When you see these Thai Turkey Burgers, just tell me your mouth is watering. I mean, those colors, textures, the sauce…and of course the colorful burger.
No bun is needed. We kept it that way on purpose. Wrap it in lettuce or put it between your favorite bun. It’s going to be a good one, no matter what.
Let's talk about all the extras.
While the turkey (or chicken) burgers are packed with all the right flavors. I mean, fresh ginger and garlic, shallots, scallions, red bell peppers and sesame seeds – talked about packed. They still need all the extra things.
- A simple slaw with all the veggies – cabbage, cilantro, carrots and red bell pepper. All sliced thin.
- Sesame seed coated thinly sliced cucumbers with sesame oil and sea salt.
- Sriracha (or your favorite hot sauce, avocado mayo and lime juice. So good.
- Dried red peppers are for more heat. Fresh mint takes every bite over the top.

Description
Honestly the best turkey burgers – so many flavors, textures in the slaw and cucumbers and spice from the mayo. Make them with ground chicken too.
Ingredients
Turkey (or chicken) Burgers
- 1 lb. ground turkey (or chicken)
- 2 tablespoons sesame oil, divided
- 1/2 teaspoon each sea salt and black pepper
- 1 egg
- 2 heaping tablespoons fresh cilantro roughly chopped
- 1 scallion, thinly sliced
- 1 heaping tablespoon fresh ginger, minced (or 1 teaspoon dried ground ginger)
- 6–8 garlic cloves, minced
- 1/2 red bell pepper, minced or finely chopped
- 1/3 cup gluten free panko bread crumbs
- 1 shallot (medium), minced or finely chopped
- 1 tablespoon sesame seeds
Mix all ingredients (except 1 teaspoon of the sesame seeds) together in a medium mixing bowl with a fork until fully combine.
Simple Cabbage Slaw
- 1/4–1/2 head green cabbage, thinly sliced (roughly 1 1/2–2 cups sliced)
- 1/4–1/2 head purple cabbage, thinly sliced (roughly 1 cup sliced)
- 2 medium carrots or 1 cup, peeled or shredded
- 1 small bunch cilantro, roughly chopped
- 1/2 red bell pepper, thinly sliced
- a fresh leaves of fresh mint – keep to the side for garnish, if desired.
Toss all ingredients together in a medium mixing bowl. Set aside.
Sesame Cucumbers
- 1 medium to large cucumber, sliced thinly
- 1 tablespoon seasame oil
- 1 pinch sea salt
- 1 tablespoon sesame seeds
Sriracha Lime Mayo
- juice from 1/2 lime
- 3/4 cup avocado mayo
- 2 tablespoons (or more) sriracha or your favorite hot sauce
Mix all ingredients in a small bowl until fully combine.
Instructions
- Preheat your oven to airfry at 425F or convection bake to 450F. Line a baking sheet tray with parchment paper. Drizzle 1 tablespoon of sesame oil around the parchment paper.
- Divide the turkey burger mixture into 4 equal parts. Place each part seperately on your baking sheet tray. Use your hands to shape them into burger patties. I like to lightly coat my hands with olive or avocado oil and then pat the burgers together, like you would a meatball and then press down slightly to form a burger patty – about 1 1/2 inches thick. Sprinkle 1 teaspoon of sesame seeds on top.
- Place in your oven and bake for 8 minutes. Turn your oven to broil on high or airfryer to 450F. Cook for 2-4 more minutes or until the tops are slightly browned. Remove from the oven.
- To assemble your burger or your plate, I like to arrange the cabbage slaw in the middle of the plate and top with a burger. Add a small amount of sliced cucumbers to the top of the burger followed by a spoonful (or more) of the spicy mayo. Finish the burger with fresh mint, if desired and red pepper flakes.
Notes
The amount of cabbage needed is a personal preference along with the size of cabbage head you have. I would estimate between 1 1/2 cups to 2 cups green cabbage and 1 cup purple cabbage.
Buy pre shredded cabbage at your grocery store – may cut some time in half for you and less mess.
My oven has an airfry setting. I know most do not. Preheat your oven to 450 and then switch to broil to brown the tops of the burgers.
