Ingredients
- 1 lb. grass fed ground beef
- 1/2 yellow onion, small diced
- 1/2 red bell pepper, small diced
- 1/2 orange or yellow bell pepper, small diced
- 2-3 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon cumin
- 1 15 oz. can red enchilada sauce
- 1 15 oz. can black beans, drained
- 3 cups shredded cheese (Monterey jack or aged cheddar)
- 1 16 oz. package tater tots
- small bunch cilantro, roughly chopped
- 2-3 scallions, sliced
Instructions
- Preheat your oven to 450F.
- In a large (oven safe) skillet, cook the ground beef, onion and peppers together over medium/high heat. When the meat is almost cooked (no pink), mix in the garlic and cook for 30 seconds.
- Turn the heat off and mix in the smoked paprika, garlic powder, onion powder, cumin, enchilada sauce and black beans. Top with half of the cheese and 1/2 of the cilantro and scallions.
- Place the tater tots on top in a single layer. Top with the remaining cheese.
- Bake for 15 minutes. Remove from the oven and garnish with the remaining cilantro and scallions.
