Quick Ginger Pork Stir Fry
Think salty and sweet with a bit of heat, crunch and tender pork pieces.
Ground pork makes this recipe come together in less than 10 minutes. Yes, that’s right. An amazing dinner on your table in 10 minutes.
So much sauce.
Coconut aminos make up the sauce. Seriously, one ingredient that is a rock star.
When combined with ginger, garlic, a touch of sesame oil and scallions – it’s so good, simple and mouth watering. You will want more.

Ingredients
- 1 teaspoon olive oil
- 1 lb. ground pork
- 1/2 teaspoon each salt and black pepper
- 1-2 medium shallots, minced
- 4 garlic cloves, minced
- 1 heaping teaspoon fresh ginger, minced
- 2 carrots, peeled or grated
- 1 bunch scallions (or about 6), finely chopped
- 1 tablespoon sesame oil
- 1/2 cup coconut aminos
- 1 teaspoon hot sauce (optional)
- 1 tablespoon sesame seeds
- 1/2 red bell pepper, finely minced
- 1 teaspoon red pepper flakes (optional)
Instructions
- Heat up the olive oil in a skillet over medium high heat. When the pan is hot, add in the pork, salt and pepper. Break up with a wooden spoon or spatula and cook for 2-3 minutes or until the pork is about 3/4 cooked through.
- Add in the shallots, garlic and ginger. Toss to combine while continuing to break up the pork.
- When the pork is completely cooked through, add in the carrots and scallions. Mix to combine. Pour in the sesame oil, coconut aminos, hot sauce (if using) and the sesame seeds. Mix everything together and bring up to a rapid simmer for 1 minute.
- Turn the heat off and garnish with red bell pepper and red pepper flakes (if desired). Serve with cauliflower rice or jasmine rice.
