Oven Baked Chipotle
BBQ Pork Ribs
Grab the napkins—these Oven-Baked Chipotle BBQ Pork Ribs are sticky, saucy, fall-off-the-bone tender, and absolutely loaded with smoky chipotle flavor. While a grill or smoker is always a joy to use, there’s something magical about how your oven can deliver the same melt-in-your-mouth texture with zero fuss. Especially when the grill is covered in snow or you just don’t have hours to babysit a smoker.
The real magic here comes from the rub and the homemade chipotle BBQ sauce. Do not be intimidated by the idea of homemade sauce—this isn’t a project. You literally mix the ingredients in a jar with a spoon. That’s it. No simmering, no special equipment, no fuss. Just shake, stir, and slather.
It’s easy. It’s bold. It’s everything you want in a cozy oven-baked rib dinner.
Let's talk about this BBQ sauce.
What You’ll Need
For the fast, jar-mixed homemade BBQ sauce:
- Ketchup
- Yellow Mustard
- Molasses
- Brown Sugar
- Garlic Powder
- Chipotle Purée
- White Wine Vinegar
- Salt + Pepper
- Red Pepper Flakes (optional)
Once the ribs are seasoned, simply let the oven do the heavy lifting. Slow, gentle heat creates that tender pull-apart texture while the sauce caramelizes into sticky perfection.
Serve with roasted potatoes, greens, cornbread, or anything that can mop up the extra sauce. It’s the kind of easy comfort food that feels special but works perfectly as a midweek meal.
Pro Tip:
For even deeper flavor, season your ribs and refrigerate them overnight. The dry rub soaks in beautifully and makes the meat extra tender and flavorful.

- Total Time: 2 hours 35 minutes
- Yield: 4 1x
- Diet: Halal
Ingredients
- 2-3 lbs. baby back pork ribs
- 2 tablespoons yellow mustard
- 1 tablespoon each sea salt and pepper
- 2 heaping tablespoons brown sugar
- 1 heaping tablespoon smoked paprika
Chipotle BBQ Sauce
- 1/3 cup sugar free ketchup
- 1 tablepoon yellow mustard
- 1 tablespoon molasses
- 1 tablespoon brown sugar
- 1/2 teaspoon garlic powder
- 1 tablespoon chipotle puree
- 2 teaspoons white wine vinegar
- Salt + Pepper, to taste
- Red Pepper Flakes, optional
Instructions
- Preheat your oven to 300F. Line a baking sheet tray with foil. Cut another pieces of foil to cover the top of the ribs.
- Place the ribs on the prepared baking sheet tray. Either mix together the remaining ingredients in a small bowl – yellow mustard, salt, pepper, brown sugar and smoked paprika or place the ingredients in a messy pile ontop of the ribs and rub all over both sides of the ribs.
- Tightly wrap the ribs up in the foil so that it is like a present. Place the ribs in the oven for 2 hours.
- Meanwhile, mix together all the bbq sauce ingredients in a bowl and set aside.
- After the 2 hours, remove the ribs from the oven and slather them with the bbq sauce (reserve any for serving or double the recipe). Tightly wrap the ribs back up and place in your oven for 35 minutes.
- Remove the ribs from the oven and let it for 10 minutes (still wrapped in the foil). When you are ready to serve, cut the ribs into portions and slather more of the bbq sauce over them.
