Smoky Roasted Mushroom Pizza
with Hot Honey Drizzle

Smoky Roasted Mushroom Pizza with Hot Honey Drizzle on marble cutting board

Monday’s aren’t our typical night for pizza but lately anything goes.

Earthy mushrooms with creamy and smoky mozzarella with bursts of pomegranate seeds, crisp kale and all that hot honey you can handle.

I love a good crispy crust, simple white pizza with all the toppings. AND this one has it all.

Simple + Delicious.

Basically my two favorite words. Simple. Delicious.

Let’s highlight the ingredients for what their real flavors are.

The rich and meaty mushrooms with the fresh silky and smoky mozzarella. They really don’t need anything else.

The kale is left raw – thinly sliced with the best crisp bite. Pops of pomegranate seeds.

Hot, spicy and sweet honey – it’s warmed from the pizza and hits all the right spots.

Grab a slice or 6!

Description

Smoky and spicy white pizza with the best fresh mozzarella, mushrooms and hot honey.

Ingredients

Scale
  • 2 cups, sliced baby portabella mushrooms
  • 1 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1 gluten free pizza crust (I used Caulipower)
  • 6 slices fresh smoked mozzarella cheese
  • 1 tablespoon honey
  • 1/4 cayenne pepper (or less if you want less heat)
  • 1 pinch salt
  • 1 pinch red pepper flakes (optional)
  • 1 leaf of kale, sliced thinly
  • 1 tablespoon fresh pomegranate seeds

Instructions

  1. Preheat oven to 425F.
  2. Toss the mushrooms with olive oil and salt on a baking sheet tray. Roast for 6 minutes. Remove from the oven and shake or toss the mushrooms around. Roast for 3 more minutes and remove from the oven.
  3. Top the prepared pizza crust with the sliced mozzarella and roasted mushrooms. Place the pizza in the oven and cook for 12 minutes or until the crust is golden, crispy and the cheese is melting.
  4. Meanwhile, mix together the honey, cayenne pepper, red pepper flakes and salt in a small bowl.
  5. Remove from the oven. Top the pizza with kale and pomegranate seeds. Drizzle the hot honey on top. Slice and serve at once.
