Chocolate Chunk Baked Donuts
with Peanut Glaze
Happy Halloween!
Ok, these little bites of goodness are just that. GOODNESS! And with this being Halloween week, I just couldn’t resist decorating them with themed sprinkles.
Peanut Butter + Chocolate are a great combination…and in donuts even better. The chocolate donut is tender, perfectly filled with cacao and extra chocolate chunks. Sugar, apple sauce and coconut oil are a great mix in gluten free donuts.
The glaze is easily made with 3 ingredients – mix and dunk or pour over. So good.
Using 100% cacao really makes the difference. It’s the real deal, with huge depth of flavor and richness.
What type of unsweetened chocolate do you use?
Just look at the tender cakey donut and all that drippy glaze.
I can’t get enough of this simple glaze – all that peanut butter flavor. Give me more.

Here is the kind that I used.
It is sugar free – which is great, because you are mixing it with powdered sugar, so you don’t need anymore sugar.
You can easily mix it into smoothies, add to your oatmeal and yes into baked goods. It really takes amazing – after all it has lots of roasted peanuts inside.
Plus this one has probiotics in it. Added bonus.

Ingredients
- 1 cup + 1 tablespoon gluten free flour blend
- 1/3 cup sugar
- 1/3 cup + 1 teaspoon cacao powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 large egg
- 2 tablespoons plain apple sauce
- 3 tablespoons coconut oil, melted
- 1/2 cup coconut milk (or milk alternative)
- 1/2 cup semi sweet chocolate chunks
Instructions
- Preheat your oven to 350F.
- In a large mixing bowl, mix together all of the dry ingredients, flour to salt.
- Add in the wet ingredients and mix together with a rubber spatula by folding the ingredients over each other until all the dry ingredients are incorporated.
- Generously grease a donut pan with cooking spray. Using a piping bag, add the batter into the donut forms.
- Bake for 8 minutes. Remove from the oven and let sit in the pan for 4 minutes. Use a sharp knife to carefully score the sides and release the donuts from the pan. Flip the pan over so the donuts come out. Let cool on a wire rack.
- Glaze by dunking the donuts into the glaze or spoon over each donuts. Sprinkle with sprinkles or leave plain.
