Lemon Herb Chicken Skewers
Outdoor dining, how I love you. This meal, just speaks to that.
Simple and quick 30 minute marinate, grilled on a hot grill and served with your favorite pesto.
I’m all about easy meals that are full of fresh and bright flavors.
The chicken takes on the lemon flavor, dried herbs and garlic help too. Serve with a grilled lemon, pesto and garnish with scallions. It’s that simple.
I used chicken thighs.
Chicken thighs are moist and tender – even on the grill. They hold lots of flavors from being marinating and cook up faster than you may think.
PLUS they are easy on the budget. Boneless and skinless make it easy to cut in half and put on a skewer.
They are also great in stir fries, for tacos and with pasta.

Description
Quick and easy with lots of fresh flavors – serve with your favorite pesto.
Ingredients
- 8 boneless skinless chicken thighs, cut in half
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme, basil or parsley (use 2 of these to make it extra)
- 1 pinch red pepper flakes (optional)
- 1/2 teaspoon garlic powder
- 1 large pinch of both salt and pepper
- zest from 1 lemon
- 3 lemons, cut into wedges
- wooden or metal skewers
- chopped scallions, for garnish
- favorite pesto for dipping
Instructions
- Combine all the ingredients (except the sliced lemons and skewers) in a shallow bowl. Toss to coat the chicken. Let sit for at least 30 minutes covered in the refrigerator.
- Heat a grill or grill pan to high heat.
- Place the pieces of chicken on the skewers incorporating 1-2 lemon wedges per skewer.
- When the grill is hot, place the prepared skewers on a single larger across the grill. Don’t more or flip for 5 minutes.
- Flip the skewers over and cook for 5-8 more minutes or until the chicken is fully cooked through.
- Remove and garnish with scallions. Serve with your favorite pesto.
