Buttery Dinosaur Kale and Cauliflower Gnocchi Stir Fry
When dinner is ready in less than 10 minutes, it’s just amazing.
Toasted creamy gnocchi with hearty and crunchy kale all coated with butter. Then top it all with fresh cherry tomatoes, large pieces of Parmesan cheese and walnuts. It’s a good one.
I prefer to cook my gnocchi in a saucepan instead of boiling them. I love the toasted outsides and the tender insides of each bite.
You won’t miss the meat. But if you need it – add in some mild or spicy sausage. It will be delicious.
Have this any time of year.
Evenings in the mountains of Colorado get chilly and this was the perfect meal to warm the soul.

Description
Ready in less than 10 minutes. A great Vegetarian meal or side dish perfectly buttery, salty and full of texture.
Ingredients
- 2 tablespoons salted butter
- 1 package fresh cauliflower gnocchi
- 5 stems dinosaur kale, trimmed and sliced thinly
- 1/2 teaspoon each salt and ground black pepper
- 1 cut cherry tomatoes, sliced in half
- 1/4 cup chopped walnuts
- 1/4 cup grated fresh Parmesan cheese
Instructions
- Heat a medium to large skillet up over medium to high heat. Melt the butter and swirl around to coat the pan.
- Add in the gnocchi and spread out so that most of it is touching the pan. Don’t touch for 2-3 minutes or until the bottom side becomes toasted brown. Toss around let cook for 2 minutes.
- Add the sliced kale, salt and pepper to the pan. Toss to combine and cook for 2 minutes. Add in the cherry tomatoes and gently toss to combine.
- Add the mixture to a serving platter or bowl. Garnish with walnuts and Parmesan cheese.
