When Ground Beef Is on Sale,
Make These 6 Recipes
When ground beef is on sale, I buy it. Usually more than one package.
It’s one of those proteins I know we’ll actually use, and when the week gets crazy, having a pound of ground beef in the refrigerator or freezer feels like I’m already halfway to dinner. It cooks fast, it’s budget-friendly, works beautifully for meal prep, and can become something completely different every night of the week.
So next time you see it on sale, grab an extra package and make one of these.
This is comfort food for the nights when I want something cozy but don’t want dinner to become an entire evening activity. Savory ground beef and vegetables topped with creamy mashed potatoes checks every box, and the leftovers are even better the next day.
Perfect for: Cold nights, Sunday dinner, and really good leftovers.
Ground beef is MADE for stir fry because it cooks in minutes and soaks up all that sauce. Hoisin, cauliflower, and savory beef make this one fast, flavorful, and exactly what I want when I’ve cooked for clients all day and need my own dinner to happen immediately.
Perfect for: Busy weeknights and meal prep.

Saucy noodles will always have my heart, especially when they’re ready in 20 minutes. Ground beef, gluten-free rice noodles, and a creamy peanut sauce make this one ridiculously easy and very hard to stop eating.
Perfect for: The nights when takeout is looking dangerously tempting.
Sweet potatoes + saucy ginger beef is one of those combinations that just WORKS. Prep the potatoes ahead of time and this becomes an incredibly fast, filling dinner with plenty of protein and a sweet-savory situation happening in every bite.
Perfect for: Meal prep and using up leftover roasted sweet potatoes.
Pot pie without making an actual pie? That’s more my speed on a weeknight.
Ground beef, tender leeks, vegetables, and a cozy, creamy filling all come together in one pan. It’s hearty comfort food without turning your kitchen into a disaster zone.
Perfect for: When you want comfort food but it’s still Tuesday.
All the cozy flavors of lasagna, without layering noodles and waiting forever for a giant pan to bake. Tender meatballs, tomato broth, gluten-free pasta, and plenty of cheese make this the kind of soup everyone goes back for.
Perfect for: Freezer meals, chilly nights, and feeding hungry kids.
