Some flavor combinations never get old, and peanut butter with honey is one of them. I grew up eating it on toast with just a little sprinkle of salt, so every time I make these Peanut Butter Honey Bites, they remind me of those simple childhood snacks. The only difference? Now they’re rolled into cute little bites with mini chocolate chips that make them even more irresistible.

They’re naturally gluten-free, require zero baking, and are one of my favorite grab-and-go snacks. Whether I need a quick afternoon pick-me-up, a post-workout bite, or something sweet after dinner, these are usually the first thing I reach for.

Chef's Note

Don’t skip the pinch of salt. It might seem like a small ingredient, but it’s what makes the peanut butter and honey really shine. Every bite reminds me of those peanut butter and honey sandwiches I loved growing up, only this version is a little more fun and perfect for sharing…if you don’t eat them all first.

If you want to change things up, swap the peanut butter for almond or cashew butter, stir in chopped nuts, flaxseed or drizzle the finished bites with a little melted dark chocolate. So good.

Description

These Peanut Butter Honey Bites are easy no-bake gluten-free energy bites made with oats, peanut butter, honey, and mini chocolate chips. Perfect for meal prep and snacking.


Ingredients

  • 4 cups gluten free oats
  • 1/2 cup coconut oil, melted
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1 tablespoon chia seeds
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips

Instructions

  1. Plus the oats in a food processor 12-14 times. You want to break the oats down slightly – half of them should be ground up while the rest are still whole. Add the oats to a mixing bowl.
  2. Melt the coconut oil in a glass container. Add in the peanut butter and honey to this container and stir to combine. Pour this mixture over the oats. Add in the chia seeds, salt and vanilla extract. Mix with a rubber spatula or wooden spoon.
  3. Mix in the chocolate chips. Place the bowl in your refrigerator for at least 30 minutes but not more than 1 hour (this will help you form it into bites)
  4. Use a 1 tablespoon cookie scoop to measure out the bites. Press them firmly (I like to have the mixture in the palm of one of my hands and then close my hand to press it together). Form them into a ball or bite and place on a tray. Repeat until all the mixture is made into bites – about 26.
  5. Place in your freezer for about 1 hour. This is a great time to try one or two of them. Transfer them to a container with a lid, label them and place them back into your freezer to store. They last 30 days in your freezer.

Notes

If you don’t have a food processor, use 2 cups roling oats and 2 cups quick oats.

I like to use food safe gloves to make the bites- this helps them to not stick to your hands. Trust me, they will stick to your hands and it makes a mess.

When I want one or two, I take them out of the freezr and let them thaw for about 5 minutes before biting into. They are perfect that way.
