Hamburger Stuffed Sweet Potatoes

You know those nights when everyone is hungry, you’re tired, and the thought of making dinner feels wildly inconvenient? This is the recipe for those nights.

Sweet potatoes, seasoned ground beef, and a ridiculously simple 2-ingredient sauce somehow turn into a dinner that feels way more exciting than it should.

And if you’re thinking, “A stuffed sweet potato doesn’t sound that exciting,” stay with me.

The sauce is doing some heavy lifting here. And it’s 2 ingredients, I KNOW you have in your refrigerator.

The Sauce Is The Reason

Every recipe needs a little something that makes you go back for another bite.

For this recipe, it’s the sauce.

Just two ingredients mixed together and suddenly your sweet potato situation has gone from “healthy dinner” to “wait…this is actually really good.”

The kind of sauce that accidentally ends up on vegetables, rice, and whatever else is nearby.

Mix together equal parts ketchup and yellow mustard. Yes, that’s it. 

I’ve seen other secret sauces that contain mayo, dijon mustard and even oil…but honestly you don’t need anything more than yellow mustard and ketchup. 

Ground Beef Keeps Saving Dinner

Can we all agree that ground beef deserves more credit?

It’s affordable. It cooks fast. Most people will eat it without complaint. And unlike that bag of lettuce you bought with good intentions, it actually gets used.

For this recipe, the seasoned beef gets piled into fluffy roasted sweet potatoes and turns into a complete meal with very little effort.

Why Sweet Potatoes Just Work

I love sweet potatoes because they quietly do their job.

They’re filling. They’re naturally gluten free. They reheat well. And the little bit of sweetness works perfectly with the savory beef and creamy sauce.

Basically, they’re the team player of the vegetable world. Plus excellent meal prep – roast 1 or 2 more and they store for up to 4 days perfectly!

Meal Prep Without Calling It Meal Prep

Here’s what I do. Roast a few sweet potatoes. Cook a batch of ground beef.

Put everything in containers. Congratulations. You’ve accidentally meal prepped. 

Now lunch or dinner for the next few days is basically done.

The Bottom Line

Some recipes are exciting because they’re new. Some recipes are exciting because they make life easier. This one falls into the second category.

Simple ingredients, easy prep, and enough flavor that you’ll actually want the leftovers. And that’s exactly the kind of recipe I keep coming back to.

Description

Stuffed sweet potatoes with seasoned ground beef and a simple 2-ingredient sauce. An easy high-protein, gluten-free dinner for busy weeknights.


Ingredients

Units Scale
  • 2 medium to small sweet potatoes, sliced in half
  • 1 tablespoon olive oil
  • 1 lb. ground beef (I used 90%)
  • 1/4 cup onion, finely chopped/diced
  • 2 garlic cloves, minced
  • 1/2 teaspoon sea salt
  • 2 tablespoons Worchestershire sauce
  • 1/3 cup grated cheddar cheese (or other cheese you like)
  • 1-2 cups shredded romaine lettuce
  • 1/2 cup cherry tomatoes, sliced in half
  • 2-3 pickles, sliced thinly
  • optional: a few thin slices of red onion

Secret Sauce

  • 1/4 cup ketchup
  • 1/4 cup yellow mustard

Instructions

  1. Preheat your oven to 400 degrees. Place the sweet potatoes (cut in half) on a sheet tray. Drizzle with olive oil on all sides. Place cut side down and roast in the oven for 25 minutes.
  2. Meanwhile, cook the ground beef in a small saucepan over high heat. Break it up into small pieces with a wooden spoon or spatula. Half way through, add the onion, garlic and salt. Cook until the ground beef is fully cooked and no longer pink. Turn the heat off and stir in the worchestershire sauce.
  3. Prep all other ingredients – have them ready so you can quickly top the swee potatoes.
  4. When the potatoes are fully cooked and you are ready to assemble. Place one of the sweet potato halves on a plate or in a shallow bowl. Use a fork to smash the inside of the potatoes. Top with a couple spoonfuls of the ground beef mixture. Add the cheese, lettuce, tomatoes and pickles. Top with the secret sauce – always serve more at the table.

Notes

Double the recipe for easy meal prep – store the sweet potatoes and ground beef seperately.
