Description

This easy coconut aminos salmon is gluten free, high protein, and ready in under 10 minutes. Serve with rice and cucumber salad for the perfect weeknight dinner.


Ingredients

Scale
  • 2 salmon filets
  • 1 tablespoon coconut aminos
  • 1 cucumber, sliced
  • 1 teaspoon sesame oil
  • 1 pinch sea salt
  • 1/2 teaspoon sesame seeds
  • cooked jasmine rice
  • garnish with scallions, thinly sliced

Instructions

  1. Preheat your oven to 450 degrees. Line a baking sheet tray with parchment paper.
  2. Place the salmon filets (skin side down) on the parchment paper. Drizzle the coconut aminos on top of the salmon filets – brush with a pastry brush or with your fingers to coat the salmon.
  3. When your oven is hot place in your oven. Roast for 6 minutes. Turn the oven to broil and place the salmon on the top rack. Cook for an additional 4 minutes or until the salmon is nicely browned and carmelized on top.
  4. Meanwhile, combine the sliced cucumber, sesame oil, salt and sesame seeds in a small bowl. Toss to coat.
  5. Arrange the bowls with some heated jasmine rice, a salmon filet and about 1/2 cup of the cucumber salad.
