Crispy Rice & Rotisserie Chicken Bowls

Use that leftover rice in this recipe

You know that container of leftover rice from takeout that everyone swore they would eat?

This is what we’re doing with it.

These Crispy Rice & Rotisserie Chicken Bowls turn leftover rice and store-bought chicken into one seriously good dinner. The rice gets crispy with sesame oil and liquid aminos, then piled high with crunchy vegetables, rotisserie chicken, peanuts, cilantro, and a creamy peanut sauce that pulls the whole thing together.

Leftover Rice Just Got an Upgrade

Cold leftover rice is actually exactly what you want here. It crisps up beautifully in a hot skillet with sesame oil and liquid aminos, giving you those salty, crunchy little edges that might be my favorite part of the entire bowl.

And we’re using something that otherwise might sit in the refrigerator for four days before getting thrown away. A win is a win.

Rotisserie Chicken Is the Shortcut

I love cooking from scratch, but I also know when to let the grocery store help.

Grab a rotisserie chicken, shred it, and your protein is handled. Add edamame and you’ve got even more protein without cooking another thing.

This is exactly the kind of shortcut that makes a healthy dinner realistic on a busy weeknight.

Load It Up With Crunch

Purple cabbage, cucumbers, red bell peppers, carrots, edamame, and cilantro make these bowls colorful, fresh, and seriously crunchy.

Don’t feel like you need every single vegetable, either. Use what you have. That half cucumber and lonely bell pepper hanging around in the produce drawer finally have somewhere to go.

The Peanut Sauce Makes the Bowl

And then there’s the peanut sauce.

Creamy, salty, a little sweet, and exactly what crispy rice needs. Drizzle it over everything and finish with chopped peanuts and extra cilantro.

Make extra sauce. You’ll want it tomorrow.

This is one of my favorite kinds of dinners because it turns leftovers and shortcuts into something I actually get excited to eat. Cold takeout rice, rotisserie chicken, whatever crunchy vegetables are in the refrigerator, and a really good sauce. Dinner doesn’t need to be more complicated than that.

Description

Turn leftover rice into crispy rice bowls with rotisserie chicken, crunchy veggies and creamy peanut sauce for an easy gluten-free weeknight dinner.


Ingredients

  • 2 cup leftover jasmine rice
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce or liquid aminos
  • 1 cup purple cabbage, thinly sliced
  • 1 cup cucumber, small diced
  • 1 cup carrots, grated
  • 1 cup edamame, shelled
  • 2 lunchbox red peppers or 1/2 red bell pepper, thinly sliced
  • 2 heaping tablespoons (or roughly 1/4 cup) cilantro, chopped
  • 1 1/2 cups shredded rotisserie chicken
  • 1/4 cup salted peanuts, roughly chopped

Quick Peanut Sauce

  • 1/2 cup peanut butter
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 tablespoon soy sauce (or liquid aminos)
  • 1 tablespoon brown sugar (maple syrup or honey work too)
  • 1 teaspooon (or more) hot sauce
  • 2 tablespoons hot water

Instructions

  1. To make the crispy rice, preheat your oven to 425 degrees. Place the rice on a baking sheet tray. Mix in the sesame oil and soy sauce. Spread the rice out so its a thin layer. Bake/roast for 10 minutes. Stir the rice and then spread it out again. Bake/roast for anothern 10 minutes or until it’s sizzling and crispy. Remove from the oven and let cool while you assemble the bowl.
  2. In a large shallow bowl, add the cabbage, cucumber, edamame, carrots, red peppers, cilantro and rotisserie chicken (see note) and the crispy rice.
  3. Mix all the quick peanut sauce ingredients together in a small jar or bowl. Pour over the top of the bowl and mix. Garnish with peanuts.

Notes

To assemble the bowls, either mix everything together and serve or serve it with each ingredient in a small ‘corner’ of the bowl – the presentation is fun to see before you mix everything together.
