Did you grow up eating Sloppy Joes?

You know the rich tomato based ground beef mixture! Usually on a toasted sweet roll or bun – hard to eat, makes a mess but it’s delicious. Well, this is a MUCH healthier version. I promise you won’t miss the soggy bun.

Find your favorite grass fed ground beef (mine is Five Marys Farms) and roast sweet potatoes, make a simple ketchup and EAT!

It’s really that simple. It’s great right away, frozen or as leftovers for lunch the next day (I’m eating some right now).

Don’t like sweet potatoes? Well, roast up some russet potatoes and call it even.

Paleo Sloppy Joe Sweet Potatoes with Homemade Ketchup

Ingredients

Scale
  • 24 sweet potatoes
  • 1 lb ground beef (90% + high quality grass-fed)
  • 1 large pinch each, salt + pepper
  • 2 shallots, small diced
  • 12 garlic cloves, minced
  • Homemade Ketchup (recipe below)
  • Garnish with chopped scallions

Homemade Ketchup

  • 3/4 cup tomato puree
  • 1 1/2 tablespoons molasses
  • 1/2 teaspoon each salt + pepper
  • 1 tablespoon honey
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Mix everything together in a small bowl. Set aside.
  2. Preheat your oven to 425F. Add your sweet potatoes to a baking sheet and roast for 45 minutes or until they are tender and fully cooked through. Remove from oven and let rest.
  3. Heat a medium sized sauce pot over medium heat. Add the ground beef, salt and pepper and cook for 2 minutes. Add the shallots and garlic. Continue to cook until all the meat is browned. Turn the heat off. Remove a few spoonful’s of fat. Add in the ketchup – stirring around to combine all the ingredients together.
  4. Cut the sweet potatoes in half. Spoon the sloppy joe mixture over the top and in the center of the potato.
  5. Garnish with scallions and enjoy hot!

 

Notes

Start roasting the sweet potatoes 30-35 minutes before you start to make the sloppy joe filling. This part takes less than 10 minutes to cook and put together. Best if served, in hot sweet potatoes.

Double the ketchup recipe – so you have extra to drizzle over the top. Always a good idea.
