8 Easy Gluten-Free Fall Dinners
You'll Want to Double

Happy September!

Fall is in the air, and I’m officially starting to crave easy gluten-free fall dinners that are warmer, cozier, and a little more comforting.

Not full-blown winter hibernation food quite yet, but we’re getting there.

With school back in full swing and our schedules filling up again, this is also when I start doubling recipes whenever it makes sense. If I’m already chopping, cooking, and cleaning the kitchen, I might as well get tomorrow’s lunch or another dinner out of it.

These eight recipes are easy enough for busy weeknights, cozy enough to welcome fall, and perfect for meal prep, leftovers, or stocking the freezer.

This is the perfect soup for that in-between weather when you’re ready for soup season but aren’t quite ready for anything super heavy. Tender chicken meatballs, lots of herbs, and fresh lemon keep it light and cozy at the same time.

Pork Green Chile Soup

Living in Colorado, green chile season and fall pretty much belong together. This one is warm, hearty, full of flavor, and even better after everything has had a chance to hang out in the fridge overnight.

This is the salad for people who still want something fresh when fall rolls around. Wild rice, seasonal vegetables, plenty of texture, and an apple butter drizzle give it all the cozy fall flavors without feeling heavy.

Make the components ahead and keep them separate in the fridge, then assemble for quick lunches throughout the week.

Fall Short Rib Pot Roast with pomegrantes

If there’s one recipe that announces cozy season has officially arrived, it’s this one.

Tender short ribs, vegetables, and a rich, savory sauce make this the dinner to save for a chilly fall night. Even better, pot roast is one of those meals that somehow tastes better the next day.

Make the full batch, enjoy it for dinner, and save the leftovers for an incredibly easy lunch or second dinner later in the week.

BBQ chicken stuffed sweet potatoes with pickled jalapeños

Sweet potatoes start making their way back into my kitchen this time of year, and stuffing them with BBQ chicken turns them into an easy, filling dinner.

Use rotisserie chicken to make this even faster, then pile on whatever toppings your family likes.

This one officially says fall.

Rich, savory, cozy beef stroganoff is exactly the kind of dinner I want on the first night when the temperature drops and putting on a sweater actually sounds good.

Make a double batch and you’ve got another cozy dinner waiting for you later.

My Fall Cooking Rule: If It Freezes Well, Double It

Meal prep doesn’t have to mean spending your entire Sunday filling matching containers.

One of the easiest things you can do is simply cook more when you’re already cooking.

Double the soup. Make extra chicken. Cook another serving or two of rice. Freeze half of the recipe before your family can eat it.

Those little things add up to a fridge and freezer full of meals you can actually use when the week gets crazy.

And leftovers don’t have to feel like leftovers. I love adding something fresh when I reheat a meal: chopped herbs, grated vegetables, toasted nuts, Parmesan, cottage cheese, avocado, pickled onions, or a spoonful of a really good sauce.

Five minutes and last night’s dinner gets a second life.

Chef's Note

Don’t feel like you need to make all eight. Pick two recipes, double them, and freeze or save half. That’s potentially four dinners with only two nights of actual cooking.
