8 "What's for Dinner?"
Recipes That Save Me Every Week

simple, delicious, and stress-free

If you’ve ever been asked, “What’s for dinner?” before you’ve even finished cleaning up lunch, welcome to the club.

It usually starts with a dramatic eye roll, followed by that tiny wave of panic that somehow lands squarely on your shoulders. As a gluten-free personal chef, I cook for a living, and trust me, I still have those moments. That’s exactly why I keep a handful of dependable recipes that I know everyone will happily eat. These are the dinners I come back to week after week because they’re easy, packed with flavor, and make answering that dreaded question a whole lot simpler.

Light Chicken Tetrazzini

This lighter take on a comfort food classic is creamy, cozy, and loaded with tender chicken, broccoli and mushrooms without feeling overly rich. It’s the kind of dinner that tastes even better the next day, making leftovers something to look forward to.

Sweet roasted butternut squash meets savory pork with just enough garlic and basil to make every bite interesting. It’s a simple skillet dinner that feels a little elevated without adding extra work.

sun dried tomato vodka pasta with sliced chicken and basil garnish in skillet

This is a huge favorite in my house – especially when everyone wants comfort and some carbs after soccer practice. Creamy tomato sauce, Parmesan, and sun-dried tomatoes come together in a pasta that’s perfect for busy weeknights.

This hearty ragu is packed with rich Italian flavors while still being easy enough for a weeknight. Serve it over your favorite gluten-free pasta for a dinner that feels like it simmered all day.

Paleo Thai Turkey Burgers with all the extra sides and vintage silverware

These juicy turkey burgers are full of fresh herbs and Thai-inspired flavors that keep burger night exciting. They’re delicious on a bun, wrapped in lettuce, or served with slaw.

Peanut Chicken Egg Roll Stir Fry with Wooden Spoon

Everything you love about an egg roll gets tossed into one quick skillet without any rolling required (this is soooo easy to cook). It’s packed with crunchy vegetables, tender chicken, and a creamy peanut sauce that’s always a family favorite.

Chicken Meatballs in Coconut Curry with jasmine rice

Tender chicken meatballs simmer in a creamy coconut curry sauce that’s full of fresh basil and bold flavor. Serve them over rice for an easy dinner that feels comforting without being heavy.

These Greek salmon bites bowls are fresh, easy, and perfect for meal prep. Made with rice, salmon, feta salad, and homemade Greek dressing.

These colorful bowls are loaded with perfectly seasoned salmon, fresh vegetables, and bright Mediterranean flavors. They’re fresh, filling, and one of my favorite ways to make healthy dinners feel anything but boring.

Which One Will You Make First?

Dinner doesn’t have to feel like another decision you have to survive every single day. Having a few reliable recipes in your back pocket makes the question, “What’s for dinner?” a whole lot easier to answer. I’d love to know…which recipe is going on your meal plan this week?
