Sometimes the best recipes happen because you mess with a good thing.
My Blender Banana and Cottage Cheese Muffins have been the most popular recipe on my website for a long time, and for good reason. They’re easy, naturally sweetened, packed with protein, and somehow taste way better than a “healthy” muffin should.
So naturally…I turned them into a loaf of banana bread.
And dare I say? I think I might like this version even more.
The same soft, protein-packed batter gets baked into a loaf pan and finished with a cinnamon sugar swirl that makes every slice feel like a little treat. It’s still easy enough for breakfast, still great as an afternoon snack, and yes…it’s still perfectly acceptable to warm up and spread with a little salted butter.
The Blender Is Still Doing the Heavy Lifting
One of the reasons this recipe became so popular is because it’s ridiculously easy and the texture is perfection.
It starts in the blender. The bananas, cottage cheese and butter blend together into a silky smooth batter before you fold in the dry ingredients.
Less mixing. Less cleanup. Giving it the best banana bread texture – no lumps or extra moist spots…its all consistant and delish.
I’ll take that trade every single time.
Cinnamon Sugar Makes Everything Better
Let’s be honest. Banana bread is already pretty hard to beat. But add a little cinnamon sugar?
Now we’re talking.
As the loaf bakes, the cinnamon sugar creates little pockets of warm cinnamon flavor that make the whole kitchen smell like you’ve been baking all afternoon.

The Secret Ingredient Nobody Tastes
Yes…there’s cottage cheese in this bread. No…you can’t taste it. Promise.
It blends right into the batter, adding extra protein and moisture without changing the flavor. It’s the same trick that makes my muffins so soft and tender, and it works just as well here.
Each slice has 7 grams of protein in it – show me another banana bread that can beat that! It’s one of my favorite ways to sneak a little extra protein into breakfast treat or an afternoon snack.

Description
This gluten-free Blender Banana Cinnamon Swirl Bread is high in protein, naturally sweetened, and made with cottage cheese for an incredibly soft, moist loaf.
Ingredients
- 4 very ripe bananas (about 1 cup)
- 1/2 cup cottage cheese
- 1/2 cup salted butter, softened
- 1/4 -1/3 cup honey (high quality)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups gluten free flour blend (I use Pamela’s)
- 1 heaping teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Cinnamon Sugar
- 3 tablespoons sugar
- 1 1/2 tablespoons cinnamon
Instructions
- Preheat your oven to 375F. Line a loaf pan with parchment paper and set a side.
- In a blender bowl, mix on low the bananas, cottage cheese and salted butter until everything is fully combined. Pour this mixture into a medium mixing bowl.
- Pour in the honey, eggs and vanilla extract. Mix with a rubber spatula until everything is combine. Add in the flour, cinnamon, baking soda and salt. Fold in with a rubber spatula. Make sure everything is well mixed and no flour is showing.
- Pour 1/3 of the batter into the loaf pan. Spread out to the edges if needed. Sprinkle about 1 tablespoon of the cinnamon sugar mixture on top. Repeat 2 more times.
- Place in your preheated oven on the middle rack. Bake for 55 minutes or until the top is slightly browned and the center is cooked.
- Remove from the oven and let cool completely before slicing into.
