It’s the last week of school around here… which means I’m pulling out all the fun recipes because middle school girls deserve a little sweet treat.

And honestly? So do the moms.

This Edible Gluten-Free Cookie Dough comes together in about 5 minutes, tastes like the real deal, and somehow disappears faster than I can scoop it onto a tray.

Soft butter, brown sugar, vanilla, dark chocolate chunks, flaky salt…

It’s giving nostalgic sleepover energy in the best possible way…oh and yay we are having a sleepover tonight so I should probably make more because it’s already gone.

The Secret To Better Tasting Edible Cookie Dough

Heat the flour first. In your microwave in a shallow bowl or in an oven on a sheet tray.

This step helps get rid of that raw flour taste and makes the cookie dough taste way more like actual bakery-style dough instead of “healthy gluten-free experiment.”

Worth the extra few minutes.

Storage Tips

Store leftovers in the refrigerator.

Because of the butter, it’ll harden up once chilled — but leave it out at room temperature for a bit and it softens right back into perfect cookie dough texture again.

This recipe is simple, nostalgic, sweet, salty, and wildly easy to make. Exactly the kind of fun recipe summer needs more of.

And honestly? Middle school girls were absolutely the target audience here… but adults are clearly benefiting too.

Description

This edible gluten-free cookie dough is soft, sweet, loaded with dark chocolate, and ready in 5 minutes. The perfect no-bake sweet treat recipe.


Ingredients

Units Scale
  • 1 cup gluten free flour blend (I used Pamela's)
  • 1/2 cup salted butter
  • 1/3 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt
  • 1 tablespoon milk
  • 1/2 cup dark chocolate or semi-sweet mini chocolate chips

Instructions

  1. Place your flour in a shallow bowl and microwave for 1 minute. Stir and microwave for 30 more seconds. Let cool slightly.
  2. In another shallow bowl or mixing bowl, melt the butter in your microwave for 25 seconds (you do not want it to be completely melted, just very soft). Add in the brown sugar and granulated sugar. Use a rubber spatula to combine the butter and sugars together until smooth.
  3. Add in the vanilla extract, salt and milk and fold together until combined. Add in the flour and fold over with a rubber spatula until all the flour is combined and you can’t see any of it.
  4. Sprinkle in the chocolate and folds until fully combined.
  5. Use a cookie scoop to form into small bites or serve as is with spoons.

Notes

If you would like to NOT use a microwave to heat your flour, place it on a baking sheet tray and place in preheated 300 degree oven for 10 minutes.

Store in a airtight container to keep it fresh. If you refrigerate it, it will harden because of the butter. Simply leave out at room temperature to soften.
