Quick Peanut Butter Beef and Shishito Pepper Stir Fry

Mark this as another way to enjoy ground beef. I can’t get over how tasty it is – I mean, melted peanut butter and sweet chili sauce. 

Start by charring the peppers in a hot and dry pan – they cook in less than 5 minutes. The beef crisps up nicely and then you add the remaining ingredients.

If you haven't tried Shishito Peppers yet,
you NEED to!

While they are usually used in appetizer recipes, shishito peppers are mild, cook up so quickly – that adding them into your main entrée is quick and easy. They add a great flavor to the stir fry.

Quick Peanut Butter Beef and Shishito Pepper Stir Fry

Description

A new and simple way to combine shishito peppers that cook in 5 minutes with tender ground beef pieces!


Ingredients

Scale
  • 6 oz. shishito peppers
  • 1 lb. ground beef
  • 1 heaping tablespoon tapioca flour
  • 1/2 teaspoon each salt and pepper
  • 1/2 teaspoon chili flakes
  • 2 heaping tablespoons high quality peanut butter
  • 1/4 cup roasted and salted peanuts
  • 1/3 cup sweet chili sauce
  • 1 scallion, chopped

Instructions

  1. Heat up a heavy duty skillet over high heat. When the pan is very hot, toss in the shishito peppers. Let them sit for 4 minutes before turning over or mixing around.
  2. Meanwhile, combine the ground beef with the tapioca flour, salt and pepper. Toss with your hands or wooden spoon to combine. Let sit.
  3. Toss the shishito peppers around after the first side is toasted brown. Cook for an additional 1-2 minutes. Remove the peppers from the skillet to your serving plate or platter.
  4. Add the ground beef to the hot pan. Spread out quickly into a large burger size patty. Cook for 6 minutes.
  5. Carefully flip the patty over. Using a spatula or wooden spoon, break the patty up into large 2 inch pieces, while continuing to cook the meat. Cook until it is fully cooked. Turn the heat off.
  6. Drain off any fat from the pan.
  7. Add in the chili flakes, peanut butter, peanuts, sweet chili sauce, scallions and shishito peppers to the pan. Toss around to coat everything with the sauce. Serve immediately.
