Ingredients
Sugar Cookie Bars
- 1 cup salted butter, softened
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 tablespoon vanilla extract
- 1/2 teaspoon almond extract
- 1 teaspoon baking powder
- 2 1/4 cups gluten free flour blend
- festive sprinkles of your choice- around 2 tablespoons
My Classic Vanilla Frosting
- 1/2 cup butter, softened
- 2 teaspoons vanilla extract
- 1/4 cup wipped cream or milk
- 2 1/4 cups confectioners sugar
Instructions
- Preheat your oven to 350F. Line a 9×9 baking dish with parchment paper and set aside.
- Using a stand mixer, whip on medium speed together the butter and sugar until fully incorporated and smooth.
- Add in the eggs, vanilla extract and almond extract – mix on low until just combine.
- Mix the baking powder and gluten free flour blend on low until just combine. Scrap down the sides of the bowl if needed and mix to combine.
- Add the sugar cookie batter to your prepared baking pan. Use a wooden spoon, spatula or your hands to press the batter into a even layer throughout the pan.
- Bake for 18 minutes or until the sides are ever so slighly beginning to brown. Remove from the oven and let cool completely on a wire rack.
- Once cooled, remove the cookie bars from the pan. Frost the top with the vanilla frosting and sprinkle your festive sprinkles on top.
To make the frosting
- Whip together all the ingredients – butter, vanilla extract, whipping cream or milk and confectioners sugar until smooth and fluffy.
Notes
I like using a gluten free flour blend that has tapioca flour in it. It adds stability to these christmas suger cookie bars.
