Description
Easy honey bacon-wrapped carrots roasted with thyme, black pepper, and red pepper flakes. A stunning, flavorful side dish perfect for holidays or dinner parties.
Ingredients
- 1 bag carrots, peeled and trimmed
- 1 lb. thick cut bacon
- black pepper
- 2 tablespoons honey
- 1/2 teaspoon dried thyme
- parsley and red pepper flakes to garnish, optional
Instructions
- Preheat your oven to 400F.
- On a sheet tray, wrap one carrot at a time with a slice of bacon. I cut some sliced of bacon in half for the smaller carrots and use a whole slice for the larger carrots. The bacon doesn’t have to cover the entire carrot (as you can see in the pictures).
- Repeat until all the carrots are wrapped in bacon. Place on the sheet tray in a line with a little room between each of them.
- Sprinkle with black pepper and place in the oven. Roast for 15 minutes.
- Remove from the oven and carefully turn the carrots and bacon over, using tongs. This will help the underside get nice and crispy.
- Place back in the oven for another 15 minutes or until the carrots are tender and the bacon is cooked.
- Remove from the oven and place on a serving platter or plates. Brush each carrot with a little bit of honey and sprinkle with thyme. Garnish with parsley and red pepper flakes, if desired. Serve.
