Cacao Chip Paleo Cookies

Cacao Chip Paleo Cookies

Yes — paleo cookies do exist, and these Cacao Chip Paleo Cookies might just be the easiest and most delicious ones you’ll ever make. With a super short, clean ingredients list—almond butter, coconut sugar, cacao powder, eggs, salt, and cacao chips—this recipe proves that simple baking can still taste indulgent.

Everything gets mixed in one bowl, no fancy steps required. Just dump all the ingredients in, mix on low for 10 seconds, and the dough is ready. It’s the ultimate easy paleo recipe for anyone craving a healthier treat without sacrificing flavor.

Thanks to the melted almond butter and rich cacao, these almond butter cookies are perfectly soft, chewy, and naturally sweetened with coconut sugar. The cacao chips add the perfect chocolatey bite, while keeping the cookies gluten free, dairy free, and grain free.

Truthfully? The recipe never makes enough cookies — so I always double (sometimes triple!) the batch. And with the scaling tool below the recipe, adjusting to 1X, 2X, or 3X is effortless. These healthy paleo dessert cookies freeze beautifully too… but they’re always best enjoyed warm, fresh from the oven.

Pro Tip:
For extra-rich flavor, warm your almond butter slightly before mixing — it blends better and gives your cookies that perfectly soft, chewy texture.

Instructions

  1. Preheat your oven to 350F. Prepare a baking sheet with parchment paper and set aside.
  2. In a medium stand mixing bowl, add all the ingredients together. Mix on low until all ingredients are fully incorporated – about 10 seconds. Make sure that you don’t see chucks of almond butter – you want it smooth cookie batter.
  3. Using a small spoon or scoop – scoop the batter onto a baking sheet pan. Space them about 2-3 inches apart. Using your fingers, press the cookie balls down slightly – this is an important step.
  4. Bake for 8 minutes and remove from oven. Let cool 1-2 minutes on the baking sheet, then transfer to a cooling rack.
