Ingredients
- 1 cup almond butter, mixed up if separated
- 1 heaping teaspoon cacao powder
- 1 cup coconut sugar
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 pinch sea salt
- 1 cup cacao chips
Instructions
- Preheat your oven to 350F. Prepare a baking sheet with parchment paper and set aside.
- In a medium stand mixing bowl, add all the ingredients together. Mix on low until all ingredients are fully incorporated – about 10 seconds. Make sure that you don’t see chucks of almond butter – you want it smooth cookie batter.
- Using a small spoon or scoop – scoop the batter onto a baking sheet pan. Space them about 2-3 inches apart. Using your fingers, press the cookie balls down slightly – this is an important step.
- Bake for 8 minutes and remove from oven. Let cool 1-2 minutes on the baking sheet, then transfer to a cooling rack.
