Apple Cinnamon Streusel Muffins
Mouthful’s of cinnamon, brown sugar and crispy apples. It’s basically Fall in your mouth. Your house will smell amazing and your stomach will be happy too.
Following my basic muffin recipe, similar to my Lemon Blueberry Muffins and my Classic Gluten Free Coffee Cake Muffins, I changed it up slightly by adding applesauce, cinnamon and nutmeg…and of course extra cinnamon in the streusel topping.
Honey Cinnamon Butter
I mean, why not?!?! Right!
Simply mix together 4 tablespoons softened or room temperature butter with 1 heaping tablespoon honey and 1/2 teaspoon cinnamon in a small bowl. When combine, slather on your muffin and enjoy.
It’s really the icing on the cake.
Toppings are always a good choice.
Streusel is streusel. It’s really good, and I usually don’t skip or skimp on it but sometime you just need a little something else.
Well, along with the streusel, I place and apple slice, cut into 3 little wedge pieces – baked them with the oven so they were still crunchy, kept their shape but also added a little bite to each muffin.

Ingredients
- 1 1/2 cups gluten free flour blend (I used Outrageous Baking)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoon cinnamon
- 1/2 teaspoon nutmeg (optional, but encouraged)
- 1 cup + 2 tablespoons unsweetened applesauce
- 1/2 cup packed brown sugar
- 1/2 cup melted salted butter
- 2 large eggs
- 1/2 apple, sliced thinly, then cut into quarter pieces
Streusel
- 3/4 cup gluten free flour blend
- 1/2 cup packed brown sugar
- 1 teaspoon cinnamon
- 8 tablespoons or 1 stick salted butter, melted
Toss all ingredients together in a small bowl, using a fork until you can’t see any raw flour. It should be crumbly.
Instructions
- Preheat your oven to 375F. Lightly grease 12 muffin tins and set aside.
- Mix together the dry ingredients in a bowl with a whisk – flour, baking powder, baking soda, salt, cinnamon and nutmeg.
- In a larger bowl, mix together the applesauce, brown sugar and melted butter until combine. Add in the eggs and mix until fully combined.
- Add in the dry ingredients and fold with a rubber spatula or wooden spoon until everything is fully incorporated.
- Spoon equal amounts of muffin batter into each muffin tin. Sprinkle a large amount of the streusel on top of each muffin. Add about 2-3 slices of apple to the center of each muffin – pressing in slightly.
- Bake in the preheated oven for 18-22 minutes.
- Remove and let cool completely for about 20 minutes. Enjoy.
