Ingredients
- 1 large head of romaine lettuce, roughly chopped
- 1 cup shredded carrots
- 1 red bell pepper, sliced
- 1 overflowing cup sugar snap peas, sliced in half
- 4 mini cucumbers (or 1 medium- large), thinly sliced
- 1 cup shredded cabbage blend
- 10 or more fresh basil leaves, torn
- 10 or mint leaves
My Simple Sesame Ginger Dressing
- 1/4 cup olive oil
- 2 teaspoons sesame oil
- 2 tablespoons orange juice
- 1/2 teaspoon sriracha
- 1 lime, juiced
- 2 tablespoons coconut aminos (or soy sauce)
- 1 tablespoons fresh ginger, minced
- 1-2 garlic cloves, minced
- 1 tablespoons sesame seeds
Instructions
- Layer all the salad ingredients into a bowl or place the lettuce on the bottom and arrange the ingredients into small piles around the bowl (like in my photos).
- Mix all the dressing ingredients together in a jar with a lid and shake.
- Pour the dressing over right before serving and toss to coat everything.
