The Best Blueberry
Vanilla Bean Coffee Cake

I know, I know – everyone says there coffee cake is the BEST…well, this is seriously the BEST Gluten free version I have EVER enjoyed.
It’s perfectly balanced with blueberries and cake – sweetened with brown sugar and lots of vanilla. Then that crumb topping – more brown sugar with the right about of butter and cinnamon.
You won’t believe that it’s gluten free!

If I...
If I had a bakery, I would sell this. It’s that good.
The brown sugar, hints of cinnamon and lemon – and of course blueberries, so good. I love how the coconut cream, eggs and butter make it perfectly moist, buttery and fluffy.

Notes
If you are using frozen blueberries, thaw them out and pat them dry as much as you can. Mine were still slightly frozen but I patted them as dry as possible with paper towel.
